Today’s post is brought to you by random selection, or maybe not if the Mr actually cheated. I couldn’t decide what to share with you today. I’m indecisive like that. So I had him close his eyes and point at the screen. It’s an easy way to not make a decision myself. ;) So you get cookies today.

But let’s talk about other kinds of issues, mk?

I’m totally and completely obsessed with Scandal. I can’t even help it. I finished the first seven episodes, the wholefirst season, in two sessions. I’m not even kidding. It’s disturbing. Now granted it’s not like I was ignoring anyone or anything like that. It was down time so it’s okay. But then I was quickly annoyed because that was the end of the first season. Since when are seasons only seven episodes?! That’s just unheard of. And dumb.

What’s the first thing I did after coming to a very sad and tragic realization the first season was done and there would be no more discs showing up in my mailbox? I did the only thing a truly obsessed person would do. I paid for the second season on Amazon Prime to watch on my computer. Seriously. And omg. Please make it stop. It’s like crack. I’d rather watch that than eat candy and that’s huge. Just ask the Mr. I don’t know what I’ll do when I’m done and have to wait for season three to start.

I might have to make another batch of these cookies to tide me over. I actually made a batch before this one and didn’t like the results so I went back and changed a few things to create these babies. They’ve got a little bit of everything going on. Plenty of chocolatey goodness, of course. You can really use whatever kind you want but I used mini Hershey’s Kisses. They’re larger than chocolate chips and smaller than regular Kisses and super delicious. If you want more chocolate throughout and not in big pieces, I’d recommend using chocolate chips or chopped chocolate. Either way… chocolate is a must.

These oatmeal cookies are thick, a little bit crunchy and totally chewy. They’re kind of awesome in a very special way. And will totally disappear before your eyes.

Want to ensure these stay super soft and awesome? Store them in an airtight container with a slice of bread. I hadn’t tried it until I made these. I wanted to see if it really worked and it totally did.

Vanilla Oatmeal Chocolate Chip Cookies

Ingredients

  • 10 Tbsp unsalted butter softened
  • 1/2 C and 2 Tbsp granulated sugar
  • 1/2 C and 2 Tbsp brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 C cake flour
  • 3/4 C bread flour
  • 1/2 tsp baking soda
  • 1/2 tsp course sea salt
  • 1 1/2 C old fashioned oatmeal
  • 1 C chocolate chips

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment or a silicone baking mat.
  • In a large bowl, cream butter and sugars. Mix in egg and vanilla. Add remaining dry ingredients, minus chocolate, mixing until smooth. Stir in chocolate by hand.
  • Arrange medium scoops 2 inches apart. Bake for 14 minutes or until lightly golden around the edge. Rest on pan for 1-2 minutes, transfer to a wire rack to cool completely. Store in an airtight container.

      You could certainly try it that way but having not tried it that way myself, I can’t be sure how it would turn out.

    what a fun flavor combo!! i’ve never seen scandal, obviously, but i try to refrain myself from watching shows cause i get hooked too easily. case in point: the hills. i’ve been watching it ALL WEEK. even jason is getting into it LOL..now hand me some cookies!!

    OMG I’m so glad we are on the same crazy train with Scandal!! I just can’t get over the second season. And just wait – it gets crazy better and just crazy crazy! I need to stuff my face with cookies and watch it all again!
