Possibly since before we were even expecting our third, I wondered how I’d announce the news here with everyone. I honestly can’t remember when I started thinking about this. I couldn’t not share something big like that but the question was how would I do it. Just spill the beans or do it in a special way. I sort of sneakily shared the news on twitter many weeks back. Each week I’d do it again and catch some new people by surprise.

Of course once everyone finds out they get excited for finding out if it’ll be a boy or a girl. Obviously I was the most eager of all but there were definitely a handful of people almost as eager, if that’s possible. I truly hate big surprises. Little ones I can deal with but a huge surprise like this just isn’t in the cards for me. It wouldn’t work. It’d drive me bonkers. We agreed if we had a girl and a boy, then decided on a third we wouldn’t find out early BUT we have two girls so finding out early wasn’t even a question.

You didn’t think I’d just spill it so easily did you? How about a recipe first? ;) No cheating. No skipping ahead.

I originally thought I’d make cupcakes with a cream filling and color the filling pink or blue but I just wasn’t up for that this time. Instead I opted for funfetti cupcakes and a simple vanilla buttercream. I know… that doesn’t tell you a gender at all does it?! That’s okay, it’s still totally fun and tasty. A must make at least once if not more. I mean they’re so fun and speckled with color, how could you not want to make them for a birthday or just any day? If you leave out the sprinkles, you have a perfect and yes I mean a perfect white cupcake. It’s moist and just downright delicious. My absolute go to cupcake recipe, at least for white cupcakes and that’s probably one of my favs anyway.

Boy!

Boy oh boy do I have a lot to learn! And so much new stuff to get now! Yikes. It’s all pink and purple, flowery, girly stuff in this house lol… even some of the stuffed animals are pink! Friendly and helpful advice for someone not use to baby boys welcome.

Funfetti Cupcakes with Vanilla Buttercream Frosting

Moist and fluffy homemade vanilla funfetti cupcakes with vanilla buttercream frosting. A fun treat for any occasion!

Ingredients
 

Cupcakes:

  • 1/2 C milk
  • 3 large egg whites
  • 1 tsp vanilla extract
  • 1 C all purpose flour
  • 3/4 C granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 6 Tbsp unsalted butter, softened
  • 3 Tbsp rainbow sprinkles

Frosting:

  • 2 1/2 C powdered sugar
  • 1 1/4 C unsalted butter, softened
  • pinch salt
  • 1 tsp vanilla extract
  • 2 Tbsp heavy cream

Instructions
 

  • Preheat oven to 350°F. In a large measuring cup combine milk, egg whites and vanilla. Set aside, bringing to room temperature. Prepare a cupcake pan with liners, set aside.
  • In a large bowl or stand mixer, combine flour, sugar, baking powder and salt. Add butter, mixing on low until mixture resembles small crumbs. Begin slowly adding liquid to the bowl, mixing on low. Mix well until all ingredients are combined, but try not to over mix.
  • Add 3 tablespoons of sprinkles, then gently mix by hand.
  • Divide batter among cupcake liners using a large cookie scoop. Bake for 15-20 minutes or until a toothpick or cake tester comes out clean.
  • Transfer cupcakes to a cooling rack to cool completely.
  • Top with your favorite frosting once fully cooled.

Frosting:

  • In a large bowl or stand mixer, cream butter until smooth. Begin slowly adding powdered sugar. Followed by salt, vanilla and heavy cream. If a thinner consistency is desired, add more heavy cream. If a thicker consistency is desired, add more powdered sugar. It's a personal preference.
  • Spread or pipe onto cupcakes.
