Hey!  My name is Meagan and I am the writer, recipe developer and photographer over at A Zesty Bite.  I am so excited to be apart of Rachel’s Apple A Day Party for 2013.  Now that Fall is finally here, I have to let you in on a little secret of mine.  It is my favorite season because the weather is great, the trees are beautiful with the leaves changing colors, football season is here which means tailgating and lastly fall scented candles.  I have a slight obsession with candles and other plug in scents.  Every time fall comes around I stock up on apple and pumpkin smells so that I have enough to last until the end of winter.

Thank goodness this is an apple party because the scent of the cooked apples mixed with cinnamon lasted in my home for hours.  No candle or plug in needed.  I get to eat and get the aroma in my home.  SCORE!

Apples are always my go to snack of choice.  I can eat plain, baked or dehydrated apples ALL DAY LONG especially when I smother them with nutella or peanut butter.  My favorite type of apple is the honey crisp.  They are back in season and I just stocked up on about two grocery bags this past week.  These apples are very addicting and have the perfect crisp to every bite.  I tried them out for the first time about three years ago and I am not sure what I did before them.  It’s all a big blur to me.  OK maybe exaggerating a bit but these apples are seriously the best.

I’ve been testing out different cinnamon roll recipes lately and I decided to throw some apples into a new test batch.  I slightly adapted the dough recipe from the blog Lauren’s Latest.

Apple Cinnamon Rolls

Prep Time: 2 hours 20 minutes
Cook Time: 15 minutes
Total Time: 2 hours 35 minutes
Yield: 12 rolls
Fluffy homemade cinnamon rolls with chunks of sweet apples, finished off with a drizzle of vanilla icing.

Ingredients
 

Dough:

  • 2 1/4 tsp active dry yeast
  • 3/4 C warm water
  • 1 Tbsp granulated sugar
  • 1/4 C milk
  • 1 large egg
  • 1/3 C canola oil
  • 1/2 tsp salt
  • 1/2 C granulated sugar
  • 4 C all purpose flour

Filling:

  • 1/2 C unsalted butter, plus 1 Tbsp, room temperature
  • 1 honeycrisp apple, chopped
  • 3/4 C granulated sugar
  • 1 Tbsp cinnamon

Icing:

  • 3/4 C powdered sugar
  • 2 Tbsp milk

Instructions
 

Dough:

  • Add the yeast, 1 Tbsp of sugar and water to a mixer. Mix a little and then let it sit for 10 minutes. In another bowl whisk the milk, egg and oil. Add this mixture into the mixing bowl. Sprinkle in the salt and the rest of the sugar. Add 1 cup of flour to the bowl. Using a paddle attachment mix on low every 30 seconds. Then add another cup of flour until all is used. Knead for 5 minutes and then place in a lightly greased bowl covered with saran wrap. Let the dough rise for 1 hour.
  • Lay the dough onto a lightly floured surface. Roll the dough out lengthwise until it reaches about 20 inches in length.

Filling:

  • Add 1 Tablespoon of butter to a large skillet and melt over medium heat. Add the apples to the skillet and cook for 5 minutes. Remove from pan and pour into a large bowl. Add the sugar and cinnamon to the bowl and stir until apples are well coated. Rub the rest of the butter over the whole dough. Make sure it is well coated. Spread the apple mixture out evenly over the dough leaving 1 inch clear of filling at the top of the dough. Roll the dough up very tightly cutting off the edges. Cut the dough into 2 inch slices and place in a large greased casserole dish. Cover and let the dough rise for another 2 hours.
  • Bake the cinnamon rolls at 350 degrees for 15-17 minutes. DO NOT OVERBAKE! Allow them to cool.

Icing:

  • Place both ingredients into a bowl and beat with a handheld mixer. Pour the icing into a ziplock or wilton icing bag. Cut the tip off the bag and lightly coat the rolls with icing.
