Hello Baked by Rachel readers! My name is Audra and I’m the mama-to-be-blogger behind The Baker Chick, where I bake up sweet (and sometimes savory) treats from my little NYC kitchen. I am so excited to be here as part of “Apple a Day” sharing some absolutely delicious Apple Pie Granola Bars with you.

This was actually my first time making granola bars, but an awesome base recipe and a fresh batch of dried apples really made them as easy as can be. They are loaded with apple chunks and a perfect combination of spices. I love this recipe because it’s totally versatile, allowing you to make it your own with different add-ins. My husband Andy hates nuts, but if he didn’t, I would totally have added some chopped toasted pecans to the mix as well.

Another great thing about these granola bars is that they can be individually wrapped and stored in the fridge for days. It’s the perfect “on-the-go” snack or in my case breakfast item that I noshed on all week as I packed up my apartment getting ready for a big move. The edges are crispy, but the bars themselves are chewy and stay that way stored in the fridge.

Apple Pie Granola Bars

Yield: 8 granola bars
Make your own apple pie granola bars with this easy to follow recipe. They're a perfect snack or breakfast on the go.

Ingredients
 

  • 1 2/3 C quick rolled oats
  • 1/2 C light brown sugar
  • 1/3 C oat flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 2 C dried apples, chopped
  • 1/2 C unsweetened coconut
  • 1 tsp vanilla extract
  • 6 Tbsp unsalted butter, melted
  • 1/2 C honey , or maple syrup
  • 2 Tbsp corn syrup
  • 1 Tbsp water

Instructions
 

  • Preheat oven to 350F. Spray or butter an 8x8 baking pan, set aside.
  • In a large bowl, combine all the dry ingredients including the spices, dried fruit and coconut or pecans if using. Toss together until well-combined.
  • In a separate bowl, stir together the vanilla, melted butter, honey/maple syrup, corn syrup and water.
  • Add the wet ingredients to the dry and stir until well mixed, making sure all the dry ingredients are equally moistened. Taste the mixture at this point and add additional sugar if you want them a little sweeter. (I liked mine on the medium-sweet side.)
  • Press mixture into the prepared pan, using a spatula to smooth the top.
  • Bake for 25-35 minutes, or until the edges are and top are golden brown. (The bars may look slightly under done, but they will firm up as they cool.
  • Use a spatula to press and flatten the bars a bit into the pan
  • Cool bars completely, (speed up in the fridge or freezer if desired,) use a spatula to remove them from the pan and cut into bars.
  • Granola bars will last in the fridge in an air-right container for up to 2 weeks.

Notes

*lots of liberty can be taken with sweetening these bars. Using 1/2 cup brown sugar and 1/2 cup honey or maple syrup will yield in a sweet (but not too sweet) bar. You can add an additional 1/4 cup of both sugar and honey/syrup if you want something sweeter.
