Hey guys – it’s Chung-Ah from Damn Delicious, and I could not be more excited to share a recipe with you for #appleadayparty 2013! See, I’m a bit obsessed with apples, particularly Fuji apples, and I try my best to have an apple every morning. But my new favorite way to enjoy my apples is in the form of a muffin, with a glaze, of course.

This super easy muffin batter comes together so easily – just a handful of ingredients and no mixer. Plus, it’s a small batch that makes just 4 muffins, although you may want to double this – I unexpectedly ate all four the minute this came out of the oven!

Vanilla Glazed Apple Cinnamon Muffins

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 4 muffins
Moist, fluffy muffins packed full with cinnamon apples and finished with a vanilla glaze!

Ingredients
 

  • 1/2 C all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 C milk
  • 2 Tbsp unsalted butter, melted
  • 2 Tbsp granulated sugar
  • 1/4 C grated apple
  • 1 large egg
  • 1/4 tsp vanilla extract

Glaze:

  • 1/4 C powdered sugar
  • 1 tsp milk

Instructions
 

  • Preheat oven to 350°F. Coat a standard muffin tin with nonstick spray; set aside.
  • In a medium bowl, combine flour, baking powder, cinnamon, nutmeg and salt.
  • In a large glass measuring cup or another bowl, whisk together milk, butter, sugar, apple, egg and vanilla.
  • Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  • Scoop the batter evenly into the muffin tray. Place into oven and bake for 13-15 minutes, or until a tester inserted in the center comes out clean.
  • To make the glaze, combine confectioners’ sugar and milk. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.
  • When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin.
  • Allow glaze to set before serving.
  • Let cool on a wire rack.
