Possibly since before we were even expecting our third, I wondered how I’d announce the news here with everyone. I honestly can’t remember when I started thinking about this. I couldn’t not share something big like that but the question was how would I do it. Just spill the beans or do it in a special way. I sort of sneakily shared the news on twitter many weeks back. Each week I’d do it again and catch some new people by surprise.

Of course once everyone finds out they get excited for finding out if it’ll be a boy or a girl. Obviously I was the most eager of all but there were definitely a handful of people almost as eager, if that’s possible. I truly hate big surprises. Little ones I can deal with but a huge surprise like this just isn’t in the cards for me. It wouldn’t work. It’d drive me bonkers. We agreed if we had a girl and a boy, then decided on a third we wouldn’t find out early BUT we have two girls so finding out early wasn’t even a question.

Butter Fudge Cake – And A Request

Do you ever see a picture or recipe and decide you just have to make it? That happened to me this week. I saw this amazing butter fudge cake and knew it needed to be made and in my belly. I finally got around to making it yesterday. Because I only have one round pan, it took a bit of time to get the whole cake baked and assembled. It’s only a two layer cake so it could have been a lot worse! At least two pans would be easier but trust me, one is totally doable so don’t be scared off by this at all.

The only plan ahead item for the entire cake, including frosting, is to set out your butter so it comes to room temperature. Everything else can be done as you go. I was honestly expecting the cake to be a bit more yellow but it’s not. Maybe the original picture was slightly deceptive? Either way, it’s still delicious. Gingerbread Cupcakes

Can you believe that Christmas is only 5 weeks away?! Insane right? I know that we still need to get through Thanksgiving and believe me … I’m not trying to rush it by because Thanksgiving is great in it’s own ways BUT we’ve got to start thinking about all of the delicious items that can be made for the Christmas season.

For starters I wanted to try gingerbread cupcakes. Searching around, the few recipes I did come across didn’t seem super special so I opted to stick with the recipe I used for the pumpkin gingerbread trifle. The gingerbread was super soft, moist and absolutely tasty. And because it raised well it seemed like a good option for cupcakes too. Beyond the cupcake, I had planned to do frosting from scratch but in the end I was scary low on butter so I stuck to Duncan Hines white frosting. In a fix, say when you’re out of ingredients, you absolutely cannot beat the handiness of jar frosting. It’s ready to be used without any effort on your part. I don’t always use jar frosting but I do like to have some on hand, just in case or when I want that special taste… because yes, premade frostings do taste different than what you would make at home. Boston Cream Pie Cupcakes

When I think of Boston cream pie, my first thought is of the donut version and then the cake or pie. I’m not really up for making donuts right now but I am almost always up for making cupcakes. I figured why not make a Boston cream pie cupcake? I’ve been sitting on this idea for a while now and finally had the perfect opportunity to try it. Sometimes I want to do something different. Change a traditional item into something new.

It seemed simple enough. Cupcake, filling and frosting. I wasn’t sure if a special cake recipe would be needed and I wasn’t sure how the pastry cream would work out, seeing as I had never made it before. There is always a chance of failing. Butterfly Cupcakes

In my trials for the perfect third birthday cake or cupcakes I tried and fell in love with the butterfly design. It only took several trials to get to that design but was worth it in the end. It was cute, fun and tasty. That is of course as long as you love chocolate. I know very few people who don’t, so these were a safe bet.

Creating the butterflies can be somewhat time consuming. I chose to make the butterfly parts ahead of time which cut down on the stress of the project. Pipe, swirl, dry and carefully toss in an airtight container for later. I would only recommend doing it this way. If you try to make the butterflies, cupcakes and frosting in one big baking frenzy you may go crazy. A tip, always make more than you need. Sometimes wings will break. More likely to break are the antennae. This is even after you’ve fully assembled the butterflies. Chocolate is fragile. So more is definitely better. Continue Reading
