Mac and Cheese Cups with Broccoli and Bacon

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 9 pasta cups
Easy macaroni and cheese cups with broccoli and bacon. A fun dinner for the entire family, ready in under 30 minutes!

Ingredients
 

  • 1 : 6oz box Horizon organic macaroni and cheese
  • 1 C broccoli florets, chopped
  • 3 strips bacon
  • 1/2 C Panko breadcrumbs
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 425°F
  • Line a muffin tin with 9 greaseproof liners. Set aside.
  • Cook macaroni and cheese according to package instructions.
  • Meanwhile, cook, drain and chop bacon.
  • Stir broccoli and bacon into macaroni and cheese mixture. Season with salt and pepper to taste.
  • Divide mixture between prepared liners. Sprinkle with Panko breadcrumbs. If desired, lightly spritz with olive oil for golden breadcrumbs.
  • Bake for 15-20 minutes or until set and breadcrumbs are golden. Cool for 5 minutes before serving.

Notes

*3 strips of chopped bacon will yield roughly 1/4 cup.
