Can we talk chick flicks for a minute? My all time favorite is The Notebook. It makes me cry every time I watch it. It’s funny how we all have a movie that does that to us, but we’ll still continue to watch it, knowing full well we’re likely to cry. There are so many others that I can easily watch over and over again, never getting bored. I finally had the chance to watch The Age of Adaline not too long ago. It was so good. So much so that I even debated on immediately buying it. I didn’t, but the thought definitely crossed my mind. If I ever find a good deal on it, I probably won’t hesitate to get it. That being said… if you haven’t seen it, you absolutely should. I’m pretty sure this could easily be an agreed upon date night movie, if you’re looking for a romantic drama.

Also, I just watched The Longest Ride the other day. I’ll be honest, at first I was pretty sure I was going to not like it at all or turn it off. The beginning definitely didn’t win me over. But, it ended up being pretty good.

I like the movies (and books) that have a good backstory. The ones that tug at your heartstrings and emotions. The ones that you can connect with in some way.

Also, totally unrelated but I’m probably the last person on the planet to have heard Adele’s new song. It literally just came on one of my Pandora channels and I’d only heard teeny tiny blips of it prior to this. For the longest time I was kind of over her music, only because it was so over played all over the radio and then when it would pop up on my own Pandora channels I’d get annoyed. It’s nice to have some new music in the rotations!

As you may know, I’m completely apple obsessed. And, I love raspberries, so clearly I had to combine them into one amazing Fall dessert.

Apples and raspberries are a beautiful match. Perfectly sweet and tart, balancing each other out. And, the bold red raspberries offer a fun pop of color to an otherwise simple looking apple tart.

Apple Raspberry Tart

Prep Time: 35 minutes
Cook Time: 45 minutes

An easy and flavorful Fall tart, featuring tender apples, raspberries and an all butter crust.

Ingredients
 

Crust:

  • 1 1/2 C all purpose flour
  • 3 Tbsp granulated sugar
  • 1/2 tsp cinnamon
  • 1/2 C butter, cold
  • 1 egg
  • 2-3 Tbsp ice water

Filling:

  • 4 C apples
  • 1-2 Tbsp lemon juice
  • 1/2 C fresh raspberries
  • 1/3 C granulated sugar
  • 1 tsp cinnamon

Instructions
 

  • In a food processor or stand mixer, combine flour with sugar and cinnamon. With mixer or food processor running on low, mix in chunks of cold butter, 1 egg and enough ice water to pull dough together into a ball.
  • Press dough into a non-stick 11-inch tart pan with removable bottom. Freeze for at least 20 minutes.
  • Meanwhile, preheat oven to 350°F.
  • Peel and slice apples to 1/8-inch thick. In a large bowl, toss apples with lemon juice to prevent browning. Add sugar and cinnamon, tossing to coat apples well.
  • Arrange apple slices in prepared tart shell. Add raspberries throughout.
  • Bake for 45-50 minutes or until crust is golden and apples are tender. Cool completely before slicing.
