Can we talk about a few things?

I bought new sneakers. Yay! Not that it was easy to find a reasonable pair because 9/10 sneakers are glow in the dark neon. Totally not okay. But, I’ve yet to try them out for real because I wanted to make sure my feet had healed totally first. Fingers crossed these do the trick! I’m kind of having a Goldilocks moment in my head – not too roomy, not too tight, just right…

Why do we have to wait till October 3 for the start of Scandal?! Torture. Maybe I’ll get some reading in between now and then. It was clearly a time sucker so far, and for good reason. I couldn’t stop myself. It was too good not to fly through. If you’ve seen it, you know what I mean. But now we have to wait.

Have you read any good books lately? I started Dan Brown’s latest book in May and haven’t finished it because… life! Traveling = the perfect time to read. Only on one leg of my trip, the only thing reading made me too was fall asleep. I swear it wasn’t the books fault at all. It’s good. Maybe I should cut this short and go read so I can move on to a new book. So send your recommendations my way! I’m sure I’ll get to one in the next few months ha ;)

I made these muffins for the Mr a few weeks back. It was a last minute request on his part that I make muffins for a ride he was going on. I really shouldn’t have stressed and tried whipping up something new but I just had that need. It was the perfect opportunity to create another new recipe. I’m always finding excuses for that.

I had bananas and chocolate, so recreating this amazing banana chocolate marble loaf seemed absolutely perfect. These aren’t your typical muffins, a little on the dense side but totally full of flavor and super moist. Plus, they puff up beautifully! Who could resist a perfectly domed muffin?

Whip up a batch of these to grab a tasty breakfast or snack on the go!

Banana Chocolate Marble Muffins

Moist banana muffins with swirls of chocolate throughout.

Ingredients

  • 3/4 C light brown sugar
  • 1/4 C unsalted butter softened
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 2 C all purpose flour
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 Tbsp sour cream
  • 2 bananas mashed
  • 3 oz bittersweet chocolate

Instructions

  • Preheat oven to 350°F. Prepare a muffin pan with liners.
  • Cream butter and sugar together. Mix in egg and vanilla until just combined. Add dry ingredients, followed by sour cream and banana. Mix until smooth. Remove 1/2C banana batter, mixing with 3oz melted chocolate.
  • To each muffin liner, add 1 medium scoop of banana batter, 1/2 small scoop chocolate batter, 1/2 scoop medium banana batter and finally 1/2 small scoop chocolate batter. Swirl gently with a toothpick. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, transfer to a wire rack to cool completely. Store in an airtight container.

    I’ve been reading the Green Mile lately. I’ve seen the movie but the book is a million times better, though very heavy. I definitely need something lighter next time around. And these muffins. A lighter book and these tasty muffins. And a glass of milk.

    These muffins look so good! I love that pan as well… where did you get it?

    I am obsessed with Scandal and can’t wait for the next season, the wait is killing me. And I hear ya on the neon running shoes. Most are so so bright, I feel like a weirdo when I go out for my runs, everything I own is super colorful and glow in the dark.

    LOVE the marbling effect!! i love neon colored sneakers – don’t hate ;) when you come visit me, we can go on walks and i can be bright and you can be meh..hahaha jk :) sorta..and maybe we can bake these?!

    I don’t do much reading unless I’m traveling – I just can’t seem to prioritize it at home. Too many other distractions! If you haven’t read The Fault in our Stars I highly recommend it!

    I love swirly desserts, especially when chocolate is involved – these look awesome!

    Here’s to new sneakers! The non-neon variety! I always get the same style but it’s a complete toss-up to whether I will actually like the color. This year it’s icky.

    My husband was pretty perturbed about all the neon shoes too. I personally don’t mind a little neon… but a whole shoe?? Anywho… these muffins are pretty darn spectacular Rachel!

    Shoes are so hard to find!! And this Scandal thing. Ahh I need to hop on this train soon. I was just thinking about Downton Abbey the other day and how mad I am at them. The new season comes here in January but I may hold off and watch the whole season later. You know how I am about that kind of stuff ;)

    I brought this recipe over to my Plan to Eat ages ago, & I keep eyeing it. So glad I finally made it. We all loved it- even my husband said 2 days later (unprompted) this needs to be a “5 star”… Thank you!!

    I will suggest to anyone who cares to not melt the chocolate very first—- I think by the time I got to the marbling it had cooled off too much- thick. not too pretty. But still so tasty!
