I have this maybe sometimes not so secret obsession with a really amazing donut… or doughnut depending on who you are or where you live. The always sweet and very talented Caroline of Chocolate and Carrots is sharing a healthified sweet apple donut recipe with us today. I was totally excited when I found out she’d be whipping up donuts as she’s made a bunch and they’ve all turned out amazing! I love how moist these look and that cinnamon-sugar topping is just perfect!

Hey there! My name is Caroline and I bake and blog over at Chocolate & Carrots. I’m so glad Rachel asked me to fix up an apple treat, considering my husband and I are apple crazy. We are quite particular about the kind of apple, though. We always like them sweet, juicy, and crisp. This usually ends up being the Gala, Fuji, or Lady apples. But, to decide that those were our favorite kinds, we had to date around.

It was kind of like a bad episode of The Bachelorette but hosted on Food Network, ‘The Apple Picker’. Picture it, the bachelors were all different shapes, sizes, and flavors. Just like the show, you have to try all different kinds before settling on the perfect ‘big, juicy, and pump’ apple of your dreams. Get it, ‘tall, dark, and handsome’ in apple form! ;-)

Anyway. We love apples.

My husband likes to eat them plain, but I’m more of a with-peanut-butter-gal, myself. In this case, I like them baked and coated with cinnamon sugar.

Everything about these donuts, reminds me of fall, which happens to be my favorite season. The smell of them baking in the oven makes you want to slip on a scarf and sip some hot cider. Mmm!

Besides the best part about them being the lovely light apple flavor, the cinnamon sugar coating is an added bonus! It brings back memories of going to the state fair on a chilly fall evening and digging into a warm elephant ear. Seriously. They are delicious!

Baked donuts are so quick to whip up and they are the perfect size for your next fall breakfast.

Whole Grain Apple Cinnamon Baked Donuts

Yield: 6

Ingredients
 

Donuts

  • 1 C whole wheat flour
  • 1 C all purpose flour
  • 1/2 C granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 3/4 C low-fat milk
  • 2 large eggs
  • 2 Tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 1 apple, grated and squeezed

Topping

  • 2 Tbsp unsalted butter, melted
  • 1/2 C granulated sugar
  • 1 Tbsp cinnamon

Instructions
 

  • Preheat the oven to 400°F.
  • Spray the donut pan with canola oil spray. Set aside.
  • In a bowl, combine the whole wheat flour, all purpose flour, sugar, baking powder, and cinnamon.
  • In another bowl, combine the remaining ingredients through apple.
  • Pour the wet ingredients over the dry ingredients and stir until just combined.
  • Either spoon the batter into the pan or put the batter into a large ziplock (or pastry) bag and squeeze into the pan.
  • Bake for 10-12 minutes, until golden brown on the bottom.
  • Allow the donuts to cool in the pan for about 3 minutes before emptying out onto a cooling rack.
  • Brush with the melted butter.
  • Dip into the cinnamon sugar.
