Buffalo Chicken Nachos
I’m quite possibly the last person on the face of the planet who hasn’t watched a single minute of Downton Abbey, until today. I’ve had the first disc to season 1 in my possession for easily a week. I wanted to know what all the fuss is about so here we go… Are you a fan?

And yes, I realize that clearly has absolutely nothing to do with the recipe screaming at you. Jumping off the screen, begging to be made and devoured immediately. It’s just how it is.

So in less than a few weeks time when you’re putting together snacks to enjoy during the big game, remember this. Make this. Cheesy nachos + spicy buffalo chicken = win. It’s everything you’d want from the two being thrown together. You might even need some backup ingredients to make a second batch because this is sure to disappear. And it is sure to be a hit with all ages, so long as they’re buffalo lovers of course.
I swear she wasn’t put up to saying this… only to repeat it for video sake ;)
Yield: Serves 4-6
Prep Time: 10 minutes
Cook Time: 8-10 minutes
Buffalo Chicken Nachos
Ingredients:
1 chicken breast
3/4C buffalo sauce
1C chicken stock
1/2C black beans, rinsed and drained
1/3C celery, chopped
1 1/2C Monterey Jack cheese, shredded
Blue cheese crumbles
Tortilla chips
Directions:
Add chicken breast, 1/2 cup buffalo sauce and chicken stock to a small saucepan. Cook over medium/low heat until chicken is cooked through. Shred chicken by hand or place in a stand mixer with paddle attachment, mix on low until desired shred is reached. Toss with remaining 1/4 cup buffalo sauce.
Preheat oven to 425 degrees.
Spread a single layer of tortilla chips on a baking sheet or large casserole dish. Sprinkle with 1/3 of the chicken, celery, beans, cheese and a handful of blue cheese crumbles. Repeat layers. Lightly drizzle with additional buffalo sauce if desired.
Bake until cheese is fully melted 8-10 minutes. Serve immediately.

Oh this looks so delicious!
Oh gosh, I can’t handle how cute she is! They’re definitely kid approved :) This is great game day food, we love all things buffalo chicken!
Soooo??? What’s the verdict? Did you love it? Hate it? Meh? We think the writing, acting, and production is just outstanding. I freakin’ cried like a school girl at the end of Season 2…just started Season 3. Can’t get enough.

You know… I’m not entirely sure. What sucks is the discs apparently only have 2 episodes on them so now I have to wait for the next one. I think it’ll take more than two episodes to suck me in completely. The first didn’t grab me but the second sort of did. I need more time ;)

HA. We were drawn in within 15 minutes. But you know, it’s not for everyone. You have to be into that sort of period piece/drama/soap opera. But I bet if you keep watching, you’ll get invested into the characters. Like it or not ;-)

I guess to their defense… I was multi-tasking while watching so I wasn’t completely paying attention lol. Still not giving up yet.
Buffalo chicken for the win!!
I just recently got into Downton Abbey. A few weeks ago I wanted to just catch an episode to see what the fuss was about too. I ended up spending the entire weekend watching both season 1 and 2. I’m obsessed with this series now and I am obsessed with these nachos! These are ah-mazing!
I am already starving for lunch and this is not helping, but in the best way possible. :) I love all your recipes Rachel! These are a must make for superbowl sunday. I’m hosting quite a few people over in my tiny apartment. This will keep them happy if our team loses. :)
I was totally late to the Downton Abbey party as well. I am about 4 episodes into season 1. I’m loving it more with every episode. These nachos look amazing!
I love buffalo sauce…yum! Oh & I have never seen one minute of Downtown Abbey! Is it worth checking out?!

You’ll have to ask again after the next disc. I’m reserving my decision until I get a few more episodes in lol
Well, now I’ll be the last person on earth to watch Downtown Abby! However these nachos are a must!
I believe the 3 year-old! They do look delicious.
(Cute video)
I WANT ALL OF THIS.
That is all.
UM hello?! These nachos look mouth watering and perfect for game day. Plus, your fab photography make me want to grab them through the screen.
That video is so cute! I love these nachos!!
I love Downton Abbey! And these nachos! I made some Buffalo chicken nachos recently, but I like the idea of heating it all up on the stove with the broth first!
STOP! I can’t even handle the cuteness!!
haven’t watched any downton. I am so out of the loop but I do want to watch it.
SHE IS SO CUTE!!!!!!!!!
Haha, she is ADORABLE! As long as they got her approval… I’m game! Great game day recipe, Rachel.
I just started watching Downton from the newest season and I really love it. My husband hates it, however :) These nachos look like the perfect gameday snack!
I can never never never say no to mexican food. This looks AWESOME!!
These look SO good; I wish I had a huge plate of them right now!
