I’m quite possibly the last person on the face of the planet who hasn’t watched a single minute of Downton Abbey, until today. I’ve had the first disc to season 1 in my possession for easily a week. I wanted to know what all the fuss is about so here we go… Are you a fan?

And yes, I realize that clearly has absolutely nothing to do with the recipe screaming at you. Jumping off the screen, begging to be made and devoured immediately. It’s just how it is.

So in less than a few weeks time when you’re putting together snacks to enjoy during the big game, remember this. Make this. Cheesy nachos + spicy buffalo chicken = win. It’s everything you’d want from the two being thrown together. You might even need some backup ingredients to make a second batch because this is sure to disappear. And it is sure to be a hit with all ages, so long as they’re buffalo lovers of course.

I swear she wasn’t put up to saying this… only to repeat it for video sake ;)

Buffalo Chicken Nachos

Cheesy nachos combined with spicy shredded buffalo chicken create the ultimate snack food.

Ingredients

  • 1 chicken breast
  • 3/4 C buffalo sauce
  • 1 C chicken stock
  • 1/2 C black beans rinsed and drained
  • 1/3 C celery chopped
  • 1 1/2 C Monterey Jack cheese shredded
  • Blue cheese crumbles
  • Tortilla chips

Instructions

  • Add chicken breast, 1/2 cup buffalo sauce and chicken stock to a small saucepan. Cook over medium/low heat until chicken is cooked through. Shred chicken by hand or place in a stand mixer with paddle attachment, mix on low until desired shred is reached. Toss with remaining 1/4 cup buffalo sauce.
  • Preheat oven to 425°F.
  • Spread a single layer of tortilla chips on a baking sheet or large casserole dish. Sprinkle with 1/3 of the chicken, celery, beans, cheese and a handful of blue cheese crumbles. Repeat layers. Lightly drizzle with additional buffalo sauce if desired.
  • Bake until cheese is fully melted 8-10 minutes. Serve immediately.

    Oh gosh, I can’t handle how cute she is! They’re definitely kid approved :) This is great game day food, we love all things buffalo chicken!

    Soooo??? What’s the verdict? Did you love it? Hate it? Meh? We think the writing, acting, and production is just outstanding. I freakin’ cried like a school girl at the end of Season 2…just started Season 3. Can’t get enough.

      You know… I’m not entirely sure. What sucks is the discs apparently only have 2 episodes on them so now I have to wait for the next one. I think it’ll take more than two episodes to suck me in completely. The first didn’t grab me but the second sort of did. I need more time ;)

      HA. We were drawn in within 15 minutes. But you know, it’s not for everyone. You have to be into that sort of period piece/drama/soap opera. But I bet if you keep watching, you’ll get invested into the characters. Like it or not ;-)

    I just recently got into Downton Abbey. A few weeks ago I wanted to just catch an episode to see what the fuss was about too. I ended up spending the entire weekend watching both season 1 and 2. I’m obsessed with this series now and I am obsessed with these nachos! These are ah-mazing!

    I was totally late to the Downton Abbey party as well. I am about 4 episodes into season 1. I’m loving it more with every episode. These nachos look amazing!

    What is buffalo sauce and what kind did you use? I want to make this at my soup kitchen on Monday so it can’t be too hot. Do you think this will work well in large pans (I will serve about 100 folks)

      I used Franks Red Hot Buffalo Wing Sauce. You shouldn’t have an issue making this in larger pans, you’ll just obviously need to increase it significantly to feed a crowd that size. Enjoy!

    This was my 13 year old son’s favorite “meal” and he called it “goodness”. When his older bothers went off to college and he was the last kiddo left at home, I’d make it on the weekend and he’d regularly heat up a helping after school during the week. Tragically, my Drew died from complications after a skateboarding injury in June, 2013. I am planning on making it again tomorrow for the first time since he went to Heaven this past summer. Our saying which gets us through our days is “Do It For Drew” and that’s what I am doing by making his favorite meal. Thank you for sharing it on Pinterest. I wouldn’t have known about it otherwise.

      I’m so very sorry for your loss. I can’t begin to imagine what you must feel having lost a child. But I do hope you are able to find some comfort in his favorite food.
