How about a story about a little family excursion and by little, I really mean little. I love a good zoo. But, I really can’t handle a bad zoo. Maybe bad is the wrong choice of word but,  it took us all of one hour max (and I’m totally being generous there), walking slowly to completely walk through the Stone Zoo in MA the other day. I’m not saying it was a bad day out because we definitely had a good time as a family and visiting some animals, but it wasn’t worth the money. Sure I got to see a black bear for the first time ever and I get that the money goes to supporting the animals and keeping up the facilities. It was a waste in the sense that holy crap this place was small, unorganized and not at all what I expect when I pay money to take my kids to a zoo. I won’t ever be visiting that particular zoo again.

However, I will happily visit two other New England zoos. If you’re in the area, the Roger Williams Zoo is bigger and even under construction, it’s better than our experience Monday. So go there. OR go to Maine and visit York’s Wild Kingdom. Not only is it bigger than you’d expect but it has a mini amusement park attached to it. My vote goes to York’s Wild Kingdom but I’m biased living closer to it than Roger Williams. Plus, I just generally love Maine. Either way, you really can’t lose.

There are others in the general area that I’ve yet to visit as an adult, so I can’t give an opinion on those. Maybe someday.

My favorite zoo ever is in DC. It doesn’t hurt that it’s free but it’s also big, if my memory serves me right. Totally a must visit.

But now for this pizza.

Holy moly. Okay so you know I’m head over heels in love with potato recipes, right? If not, where have you been?

But anyway… I knew eventually I’d put it on pizza but never in my wildest dreams did I expect to be truly wowed. I knew I’d love it but seriously this was incredible. It has perfectly seasoned, smooth buttery mashed potatoes on top of a thin homemade crust. Clearly a ton of bacon was necessary. But wait… there’s not one, not two but three varieties of cheese on this baby. THREE! It’s like a side dish turned into an ultimate slice of heaven… if you’re a potato lover like I am. Trust me, this is amazing and worth devouring. Also, don’t skimp on the chives. They give a nice flavor addition to an already scrumptious pizza.

Loaded Mashed Potato Pizza

Cook Time: 20 minutes
Total Time: 1 hour 30 minutes

Creamy mashed potatoes with bacon and chives on top of an easy homemade pizza crust.

Ingredients
 

Dough ingredients:

  • 1 C warm water
  • 2 1/4 tsp active dry yeast
  • 1/2 tsp granulated sugar
  • 2 1/2-3 C all purpose flour
  • 1/2 tsp salt

Toppings:

  • 2 medium potatoes
  • Milk
  • Butter
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 6 slices bacon
  • 1 oz extra sharp cheddar cheese, finely shredded
  • 1-1 1/2 C whole milk mozzarella, freshly shredded
  • 3 Tbsp Parmesan cheese , finely grated
  • Chives

Instructions
 

  • Dissolve yeast and sugar in warm water. Allow yeast to activate for 5-10 minutes. Add flour and salt to the bowl of a stand mixer. When yeast is ready, turn mixer on low and drizzle liquid in slowly. Turn mixer up to medium, adding additional flour a spoonful at a time as needed until dough is no longer sticky. Transfer to a lightly greased bowl. Cover and allow to rise until doubled in size.
  • Meanwhile, prepare mashed potatoes. Add peeled, chopped potatoes to a pot of water. Cook over medium-high heat for 20-25 minutes or until fork tender. Mash with milk, butter, salt and pepper.
  • Prepare bacon as desired. Drain and chop.
  • Preheat oven to 425°F. Lightly grease a baking sheet. Spread dough to fit pan. Bake for 8-10 minutes. Spread mashed potatoes over entire crust. Sprinkle with cheese, top off with bacon and bake for an additional 12-15 minutes or until cheese is lightly browned. Add minced chives. Slice and serve warm.
