So our Monday started out like a stereotypical Monday. Only for me, it was kind of funny.

The morning was going all fine and dandy, then out of nowhere it was suddenly time to go out and catch the bus for the girls to go to school. Only when we got down to the garage, the bus was already coming down our street and driving by our house. Seriously,  it’s been showing up more than 5 minutes early all school year and some days we just barely got outside in time. Thankfully we were in the car already, since lil man and I were heading out for a quick errand. We caught up to it two houses down and the girls ran to catch it. Kind of funny because they were clearly panicked they’d still miss the bus but the mom at that house told the bus driver to wait. I felt bad… but it was still funny.

And yeah, around here the houses are fairly spread out so they stop at basically every house that has a kid. So much different than when I was a kid! We all gathered at one house, not the end of our own driveway. Just aging myself again there I’m sure. Rain, cold, sleet, snow, wind… we waited outside until the bus showed up. No warm cars or mom driving us to school if it was late.

Forget everything you’re doing and make these. Right. Now. They will rock your world. They’re truly the perfect pumpkin cookie of all time. I recreated my favorite soft batch chocolate chip cookie into a spiced pumpkin cookie. The result… incredible! They’re not all cakey pumpkin blobs like a lot of pumpkin cookies turn out like. They look and taste like real chocolate chip cookies but they’re pumpkin flavored!

I did some totally scientific research to create these and I’m beyond thrilled with the results. This will absolutely be my go to pumpkin cookie recipe from here on out… well… until I decide I need to re-perfect it because we all know that’s bound to happen eventually.

Not only are these  cookies loaded with chocolate chips, but these soft pumpkin cookies stay soft and aren’t at all cakey! Pumpkin cookie heaven.

Perfect Soft Batch Pumpkin Chocolate Chip Cookies

Your favorite chocolate chip cookie turned into a spiced pumpkin cookie, loaded with chocolate chips, perfect for Fall.

Ingredients
 

  • 10 Tbsp unsalted butter, softened
  • 1/2 C granulated sugar
  • 1/2 C light brown sugar
  • 6 Tbsp pumpkin puree
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • Pinch cloves
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 C all purpose flour
  • 1 1/2 C semi-sweet chocolate chips

Instructions
 

  • In a large bowl or stand mixer, cream together butter and sugars. Mix in pumpkin, vanilla and dry ingredients. Mix well until there are no streaks in the batter. Stir in chocolate chips. Cover and chill until dough is completely chilled and firm.
  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Use a medium cookie scoop to scoop dough, place dough 2 inches apart on prepared baking sheet. Press additional chocolate chips into the tops of cookie dough if desired.
  • Bake for 10-11 minutes. Allow cookies to rest on baking sheet for 2 minutes before transferring to a wire rack to cool completely. Repeat process with remaining dough.
  • Store cookies in an airtight container.
