Recently I shared these muffins. What I didn’t tell you is they almost didn’t happen. Weekly I buy bananas but sometimes we don’t get to them as fast as we should. It rarely gets to the point that I’ve forgotten about them entirely and they have to be tossed. Though one week I decided instead of risking too many going bad before we’d have a chance to eat them, I froze four. I’d asked my lovely blogger friends on twitter if it was doable. We have a deep freezer but in all honestly, it doesn’t get used like it should. I’m not overly familiar with what really can or can’t be frozen or best practices… at least on a personal level. I usually ask around for advice or simply google. What would we do without google?
Anyway… so I froze some bananas. I had read it’s best to peel them before freezing. Easy enough. Peel, toss in a bag, push out as much air as possible, then seal that sucker up and freeze. Great. Done. Now what? Continue Reading
Right now I’m in catchup and planning mode. I have a few items that have already been made and devoured. Pictures have been sitting patiently waiting for my attention, waiting for love and writing inspiration. Sometimes it’s easier said than done. Sometimes I just need a break. We all have those days and weeks. On the other hand, I have items waiting to be made. I actually have a whole list of items I’d like to make. Whether I’ll get to them all or not in the near future is obviously yet to be determined. Only time will tell but I do have some truly fun and yummy ideas.
I’m super eager for fall…at least when it comes to all of the yummy food and more predictable weather. With fall comes so much… peaches, though technically that’s still a summer item but if you look at the weather it could be debatable. Apples… oh apples how I love thee. I’m most eager for them. Amazingly juice and large cortland apples. They’re my favorite. I could go on and on about fall but I’ll just stop there. Why ruin a good thing? Apples is really where it’s at. Continue Reading
A week or so ago I was playing around looking at the different national food holidays. I’m not sure how they come to decide what day is what, but it’s still fun to look and occasionally play along and celebrate. I noticed that banana bread day was coming up, unfortunately I had the date wrong in my head and missed it… it was earlier this week but that didn’t stop me from fixing up a new banana bread type item. I decided to go with muffins instead, close enough I figure.
I’d already made a banana bread and strawberry banana muffins so I wanted to come up with something a little different. My plan was to use dehydrated banana slices to top off the muffins or maybe even put banana chunks inside. The problem was that apparently dehydrating bananas in the oven takes a ridiculous amount of time that I was simply not willing to do. We’re talking 18 hours! That’s what I found as an answer anyway and that was clearly requiring too much of an effort… not happening! I also didn’t want to go to the store so I stuck with some basic but honestly perfect muffins instead. Continue Reading
I had contemplated making muffins this week but then that wouldn’t have given me anything new to share. You see… I have two very favorite muffin recipes. One is a very quick and basic recipe. The other is a bit more special. Both fulfill my muffin cravings when those come along. I was ready to make either one but figured I’d go a different route.
I started out making what seemed like a basic coffee cake recipe. Before I added everything to the pan I decided I had to add apples. Apples in baked goods is always a good thing, right? The thing that caught me by surprise was not only the bake time but also how liquidy the batter was. When I make muffins or even cupcakes, the batter is usually thicker. I was skeptical.
