Today we’re throwing our friend Caroline from Chocolate & Carrots a virtual baby shower. She’s been waiting for what probably feels like forever to meet her sweet little baby.

I knew immediately that I wanted to share a mini treat for the occasion because there are almost always bite size treats at baby showers. I hadn’t thought about it until after the fact but the colors I used worked out just right for a gender neutral shower. You might think I love cheesecake. I don’t. I love making it though and my family loves eating it. Really, I’ll make just about anything even if I don’t personally like eating it. I know *ugh* I don’t like cheesecake. I’m sorry! I save that portion of my belly for things like apple crisp and apple pie.

I’ve had this cheesecake on my mind since Thanksgiving when my brother mentioned it. I couldn’t get it out of my head! I’ve stared at the image of The Cheesecake Factory’s peppermint bark cheesecake a ton while contemplating how to make this. I had my fingers crossed tight that this experiment would work out.

‘Tis the season for gingerbread flavored everything. I love gingerbread, the taste and even the smell. And there’s amazing gingerbread soap too. It smells good enough to eat. But I don’t have a recipe for soap. Sorry. That you have to go and buy. I couldn’t resist it when I saw that flavor… scent… whatever online. I had to have it. Now I’m fearful that it’s going to make me crave gingerbread every time I wash my hands. So much for all the baby weight I’ve lost. Gonna pack it all  back on thanks to Bath and Body Works. Apple Pecan Cheesecake

I’ve been doing a lot of complaining lately over the amount of pumpkin recipes I’ve been seeing pop up all over the food blogosphere already. Not that I don’t love making pumpkin recipes… I do! I just think it’s too early. Sure it’s technically Fall, but where’s the apple love?! Most stores are having trouble with canned pumpkin stock. Many people I’ve talked to haven’t even found a single can yet in their area, so I refuse to start pushing pumpkin recipes until I know more people have the ability to make them. If you’re dying for some pumpkin recipes, there are several recipes posted from last year. I promise to post some new pumpkin recipes in the coming weeks, just not yet. Okay… off of my soap box, time for some apple love.

This is part 2 of the super special anniversary meal I made for the Mr a few weeks back. Yeah yeah… things don’t always get posted right away (with or without a new baby in the house). I remember spotting this recipe last year and quickly deciding not to make it. I figured fruit on a cheesecake might not go over too well. I seriously have no idea what was going on in my head that day. I mean let’s think about this one… if you love cheesecake and apples then what’s not to love, right? Right. I love apples. Okay I’m actually a tad obsessed with apples, especially this time of year. I may not like cheesecake *gasp* but I do love making it. Strange, I know but whatever… same goes for a lot of things. Mini Raspberry Swirl Cheesecakes

Mulling over ideas for what to make in the coming months, I came across an idea and tweaked it to be more of a summery dish. It doesn’t have to be eaten strictly in the summer months, but typically when I think of raspberries that’s the time of year that comes to mind. Maybe it also has to do with the fact that it’s rare to find good fresh fruit up here in the winter months. Which means I also must confess… I didn’t even use fresh fruit for this. I used frozen. But I still did all of the work. Plus, fruits and veggies are suppose to be frozen at their peak so in most cases they should be totally acceptable to use for almost any dish unless you’re looking for pretty fruit for presentation purposes. If that’s the case, you definitely should hold off until the fruit is in season and can be found fresh.

Another confession, I’m not a cream cheese fan. I’ll cook or bake just about anything but it’s not always for me. I knew the Mr would enjoy these little bite size cheesecakes and seeing as I had cream cheese needing to be used in the fridge, I figured why not. It was a – make a new mini idea or something I’ve done before kind of thing. Clearly I chose the something new so I could share the deliciousness with you.
