I know I’m a bit behind but can we talk about The Golden Globes for a minute? I only watched because Ricky Gervais was the host. He’s so funny and completely inappropriate. He makes the show worth watching. Do you agree? Also… I had this sudden need to see Kate and Leo in another movie together after seeing them in the same room. I’m sure they’ve been at the same award shows before, since Titanic, but it was such a sudden they must make another movie together moment in my mind. Do you think they should? On that note, I should probably go watch Titanic again. It’s been many years since I last saw it.

I don’t normally play the lottery. It’s one of those things that I feel you’re just throwing money away by playing…what with the chances being so slim. However, on a whim today, I decided to buy a few tickets. I didn’t go overboard like I’m sure many are. Just a few. I figure that way I’m taking part in the fun and dreaming, while also not wasting a ton of money. Dreaming is fun. Someone behind me in line said something along the lines of it being SO much money and what would someone even do with that much. Oh the possibilities… What would you do if you won a large sum of money?

I’m a huge fan of taco night. My family might actually get bored of it because I tend to plan it weekly, but it’s a classic. Simply. Easy to whip up. Flavorful. Basically a perfect weeknight meal.

I usually stick to the same basic plan but this time I switched things up, ditching my standard options of soft and crunchy shells. Instead, soft Boston lettuce leaves hold the filling. The perfect healthy twist for taco night!

Seasoned ground chicken, served in leaves of tender lettuce with shredded cheese and spicy chipotle sour cream sauce. An quick and flavorful dinner, perfect for any night of the week!

Cook Time: 15 minutes

Total Time: 20 minutes

Chicken Taco Lettuce Wraps with Chipotle Sour Cream Sauce

A healthy twist for taco night! Seasoned ground chicken, served in leaves of tender lettuce and topped off with optional cheese and spicy chipotle sour cream sauce.

Ingredients:

  • 1lb ground chicken
  • 3Tb homemade taco seasoning or 1 pkg store bought
  • 1C water
  • 7oz corn, drained
  • 1C black beans, drained and rinsed well
  • Boston lettuce or other soft leaf lettuce
  • Shredded cheddar cheese
  • Diced tomatoes, optional
  • Sour cream, optional
  • Chipotle sour cream sauce

Directions:

  1. Cook ground chicken, draining any fat. Mix in taco seasoning, water, corn and black beans. Cook for an additional 5 minutes, or until mixture thickens and beans are heated through. 
  2. Spoon mixture into lettuce leaves. Top off with desired toppings and a drizzle of homemade chipotle sour cream sauce. 
  3. Store any remaining filling in the refrigerator, reheating as desired.

    Rachel–I love lettuce wraps but you have me swooning with the chipolte sour cream sauce–it envelopes the whole dish in amazing flavor!!

    Dreaming is always fun indeed – especially when it comes to large sums of money and that jackpot is insane! My question is would you pay the 25% to stay anonymous if you won?
    BTW, these chicken taco lettuce roll ups sound amazing – love that chipotle cream sauce!

      I had no idea that was even an option… paying to remain anonymous for that sum of money would definitely be worth it!
