Spicy Chicken Bites
Crisp panko encrusted chicken bites with a spicy kick. Perfect for any party or game day celebration.
I planned on waiting until Monday to start up with posts again, but then realized how much I wanted to share this with you before New Year’s Eve, just in case you wanted to try it. Of course, this isn’t just a New Year’s recipe… it could be an any day of the week recipe for lunch, dinner, appetizer or snack. And let’s not forget that the superbowl will be here before we know it and that is a perfect time for snacks and appetizers!
I love homemade chicken tenders. They’re crisp on the outside and tender inside. So many coating and spice possibilities. Plus, the dipping options are pretty much endless. Normally I’d opt for spicy brown mustard (which btw why is it called spicy brown mustard if it’s still yellow. Then again, would people even eat it if it really were brown?) or ketchup (I know that baffles you since I loathe tomatoes.) but this time I chose barbecue sauce. The sweetness worked so well with the spicy heat of the cayenne and red pepper flakes.
Do you have any fun plans for New Year’s Eve? I’m positive I’ll be passed out well before the ball drops. I’m like a 90 year old lady in a 30 something body that just can’t handle late nights anymore. I’ll try to stay up and fail miserably.

Spicy Chicken Bites
Ingredients
- 2 chicken breasts
- 2 large eggs
- 1/2 C plain panko bread crumbs
- 1/2 C plain bread crumbs
- 1/8 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/2 tsp ground black pepper
- olive oil
Instructions
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Trim and cube chicken breasts into small bite sized pieces, roughly 1-inch.
- In a small bowl, whisk eggs. In a second bowl, combine remaining dry ingredients. Coat a few chicken pieces at a time in the eggs. Coat one piece at a time in the bread crumb mixture. Transfer to prepared baking sheet. Lightly spray coated chicken pieces with olive oil.
- Bake for 25-30 minutes or until cooked through. Serve with your favorite dipping sauces.
