Apple Cinnamon Cranberry Muffins

So you’re sick of the same breakfast routine or you’re just in the mood to bake something warm for a cold winter morning. That was me yesterday. I was up early and starving! I had wanted to make a batch of sticky buns but wasn’t willing to wait several hours before being able to devour them. Muffins only take about 35 minute start to finish if you move right along. 35 minutes was definitely doable!

So I whipped out my muffin recipe and went to town. Blueberry for Josh, some apple cinnamon and a few apple cinnamon cranberry. Basically, I divided up the muffin mixture into three parts and added my ingredients. This recipe allows you to start with the basics and then add whatever range of flavorings to complete the batch. The possibilities are pretty endless but I stick to the classics.

Apple Cinnamon Cranberry Muffins

Ingredients

  • 2 Cups all purpose flour
  • 1 Cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 Cup unsalted butter melted
  • 1/2 Cup milk
  • 2 large eggs
  • 1 1/2 - 2 tsp cinnamon
  • 2 Cups fruit blueberries, apple, cranberry etc

Instructions

  • Preheat oven to 350F°. Fill 12 cup muffin pan with liners. Mix flour, sugar, baking powder and salt together. Add in wet ingredients, combining well. Scrape the sides of the bowl often. How the rest goes depends on your plans.
  • Blueberry: skip cinnamon and add 2 cups blueberry to mixture.
  • Apple cinnamon: add cinnamon to mixture followed by 2 cups of chopped apples.
  • Apple cinnamon cranberry: add cinnamon to mixture followed by 1 - 1 1/2 cups of chopped apples and 1/2 - 1 cup dried cranberries.
  • Using a large cookie scoop, divide up batter between your 12 muffin liners. Top off with a spoon full of sugar. Pop in the oven for 25 minutes, cool at least partially before enjoying.

    I would appreciate more visual materials, to make your blog more attractive, but your writing style really compensates it. But there is always place for improvement

    You have to express more your opinion to attract more readers, because just a video or plain text without any personal approach is not that valuable. But it is just form my point of view

    These look amazing but are you able to give quantities in metric please as I’m not in the U.S

      I don’t have that info at this time, but there are a lot of free conversion calculators available online.
