Apple Crisp Smoothie

Apple Crisp Smoothie Recipe - bakedbyrachel.com

You know how obsessed I am with all things apple so you had to have seen this coming. My oldest, while totally loving strawberries, for some baffling reason didn’t enjoy any other smoothie I made besides this one. No joke and I don’t entirely blame her. Like mother like daughter, totally in love with apples. It was truly delicious, full of all of the flavors you’d hope for from an apple crisp. I could’ve called this spiced apple smoothie and I thought about that but I liked apple crisp smoothie better. It’s not crisp but it does have all of the same ingredients – apples, spices, oats… and of course some other ingredients. And yes, there is a bit of measuring with this one. You don’t have to measure if you don’t want to. Shake shake shake if you trust your shaking instinct. But absolutely do make this. It’s a sip of Fall while waiting for Spring to arrive. Kind of weird I know but I’d love it to always be Fall.

On a totally unrelated topic, can we please discuss how completely ridiculous it is to try and give a 3 1/2 year old eye drops? Having three kids in the house means that sickness spreads easily and as much as I’d hoped the pink eye would stop with our oldest, of course her little sister got it. Now I’m dealing with the nightmare of treatment. As dramatic as it is to give her the silly eye drops, it’s kind of comical in the end because she flat out refuses to open her eyes once the drops are in, of course claiming simply that she can’t. We’ll ask her all kinds of questions trying to trick her into opening her eyes. No such luck. I have to open them for her and then she’s fine. Weird I know. I seriously need to get it on video. Fingers crossed lil man doesn’t get it. Can you imagine that drama?

You should make individual apple crisps! Maybe slightly time consuming but still worth it and then you don’t have a huge amount leftover taunting you :)
