We were going to do the St Patrick’s Day gingerbread house…I know, I keep talking about it and it hasn’t happened. But… another round of sickness hit. As soon as we’re in the clear it’s totally happening. When will it end though?! I swear this has been the absolute worst Winter sickness wise. So many people I know have been sick for weeks or months on end. One issue after another. Hopefully there is an end in sight. Hopefully Spring will bring warm weather and good health again!

I’m seriously itching to start Spring cleaning. The itch hit me this past week when the weather got really nice. I meant to just organize one little cabinet and them next thing I knew, tossing things left and right, cleaning and organizing. It’s not a bad thing. It’s just kind of funny how the ‘itch’ always hits in the Spring. Do you get the Spring cleaning itch too?

Along with that, I’m always coming up with new things to do or change around the house this time of year. Ever since we bought our house, years ago, I’ve been wanting to redo our master bath. Every year something else comes up that is more important. There isn’t anything really wrong with it, I’m just not a fan of certain things…the counter, the paint, the weird wall paper border that the previous owners put up. Tackling those little things is my mission.

I’ll admit, I’ve never been a huge smoothie drinker. Sure, I’d occasionally get one when I was out. Something super fruity and seemingly impossible to replicate at home. But then I made a smoothie or two over Winter break and there was no looking back. I want all the fruity smoothies. Still… no green stuff in sight. I just can’t. But fruit. Always and forever.

This super easy homemade berry coconut milk smoothie is packed full of flavor. It’s so ridiculously easy to whip up, you just have to make it.

A perfection breakfast, mid morning snack or post workout drink! It’s so versatile!

Best of all, you can customize your drink by switching up the berries! Berry blend one day, strawberries or blueberries the next. SO many options! This is a must make.

Berry Coconut Milk Smoothie

A refreshing and flavorful mixed berry and banana smoothie with coconut milk.

Ingredients
 

  • 1 banana
  • 1 - 1 1/2 C coconut milk beverage, found in the refrigerated aisle
  • 1/2 C plain yogurt
  • 2 C frozen mixed berries
  • 1-2 Tbsp honey

  • Combine all ingredients in a blender, processing until smooth. Adjust coconut milk and honey amounts for desired thickness and sweetness.
