Who else is starting to count down until Scandal starts back up again? I know it’s months away, but it’s months closer than it was! So that’s a big upside. We’ve been doing a massive re-cap over the past couple of weeks, watching from the very beginning. It’s been so much fun, and definitely beats the majority of Summer shows!

Besides that, I’ve been busy back into reading again. I seem to go through phases. One where I’m itching to keep reading and practically can’t stop. And the other where I can’t bring myself to even pick up a book. It’d been so long since I read Insurgent that I decided to read through that again, which was so much fun. I had forgotten most of what happened but then little things would happen and a big part would come back to me. Such a great book to re-read. I can’t say I’d enjoy re-reading a lot of books, but certain ones definitely. Now I’m excited to finally start the third in the series. I know I’m a little late to the game. I even pre-ordered it but never got around to starting it for one reason or another.

And like my reading phases… I’m on another ice cream kick. I just can’t stop! Can you blame me? And hopefully you’re just as excited about it as I am! I can’t promise this’ll be the last either.

Homemade ice cream is worlds better than store bought and it’s been HOT, so a nice cold treat is always a plus. Creamy homemade ice cream straight from the freezer, that’s hard to beat, especially when it’s cheesecake ice cream!

Blueberry-Vanilla Cheesecake Ice Cream

Creamy homemade cheesecake ice cream with blueberries and graham cracker crumbs throughout.

Ingredients

  • 1 1/4 C whole milk
  • 1 1/4 C heavy cream
  • 8 oz cream cheese softened
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 C granulated sugar divided
  • 1/3 C graham cracker crumbs roughly 3 sheets
  • 1 C blueberries
  • 1 Tbsp lemon juice
  • 1 tsp cornstarch

Instructions

  • Add milk, heavy cream, cream cheese, salt, vanilla and 3/4 cup sugar to a blender. Process until smooth. Transfer to the refrigerator to chill thoroughly.
  • In a small bowl, whisk together cornstarch and lemon juice. Add blueberries, sugar and lemon juice mixture to a small saucepan. Cook over medium heat, stirring to dissolve sugar. Continue cooking until blueberries are tender and releasing their juices. Gently mash. Transfer to a medium bowl. Allow to cool, then cover and chill.
  • Process graham crackers until only fine crumbs remain. Set aside.
  • Churn ice cream according to manufacturer's directions. In the last 5 minutes, add spoonfuls of blueberry mixture. Transfer ice cream to a freezer safe container, alternating layers of graham cracker crumbs and ice cream. Freeze until firm.
  • Allow ice cream to sit for 5-10 minutes before scooping.

Notes

Recipe serves roughly 4-6, yields 1 quart.

    We usually pick over 20 pounds of blueberries here in Buffalo, NY and end up freezing a bunch for smoothies later on. I was looking for another use and you just gave it to me. I love the idea of combining blueberry and vanilla. We will be making this!

    I love scandal, need to catch up on last season’s episodes. Currently i’m staying away from spoilers. This ice cream looks so yummy. i really do need to invest in an ice cream maker

    Rachel, you can go through as many ice cream phases as you want — it’ll never get old for me! I’d love to eat ice cream every single day, especially if the flavors were as fun as this cheesecake one. Those gorgeous graham cracker crumbs are calling my name; I’d probably scoop out every swirl of them I could find and leave none for anyone else! ;) Pinned!
