Buffalo Chicken Wrap
So there was a package of chicken sitting in the fridge and me wondering what to do with it. I thought…keep it simple and just toss it in the oven loaded with pepper? I how I do love peppered oven chicken but maybe something different would be nice for a change. Then I remembered I had supplies for wraps. Oooh yummy wraps. It’s really just a fancy version of a sandwich, there is still something special about a wrap though. Maybe it’s the possibilities, endless possibilities. They can be cold, warm, filled with meat or veggies or both!
Buffalo chicken wraps, super simple and pretty healthy too!
Buffalo Chicken Wrap
Servings: 1
Ingredients
- 1/2 chicken breast
- 2 tbsp Buffalo sauce
- tortilla wraps two small or one large
- romaine lettuce
- Mexican cheese blend shredded
Instructions
- Cook your chicken and cut into strips or bite size chunks. In a bowl, pour 2 tbsp buffalo sauce over chicken pieces and coat well. Depending on the size of your wraps you may be able to make one large wrap or two smaller wraps. Ours are around 8" so I made two smaller wraps. If making two smaller wraps, divide chicken into two portions. Place your chicken on the center of the wrap, or wraps. Cover chicken with cheese and Romaine. Fold in two opposite sides, overlapping and covering the contents of the wrap. Then fold in one of the remaining sides and roll to close.
