So there’s this thing called the Super Bowl on Sunday. I’m not sure about you, but I’m more interested in the commercials which is honestly kind of weird to say since normally we’re probably all dying to skip the commercials. Even so, we’ve gotta eat regardless of why we’re watching or pretending to watch or very blatantly not watching, right? Right. And I’m not sure about you but on days like that, I have no desire to even attempt to order out for pizza or any other kind of food. Why order out and wait, when you can prep your own food ahead and eat whenever you want. I promise it’s not that scary. I’ll even give you a pass just this once and say you can buy pizza dough if you prefer. If you’re truly that scared of yeast… but I swear it’s really not to be feared. Pinky swear.

The Mr had been reminding me how he’d like some Cajun meals. I was having one of those omg the chicken needs to be used moments and then it hit me that I should make a Cajun chicken pizza. I like playing around with pizza and we like eating pizza, so why not? I had everything but the mushrooms and some back up cheese… because extra cheese is always a good idea.

Let’s be clear here… the chicken is amazing. It’s practically on the same level as barbecue chicken in my world. Maybe. But it’s really good. And even if you don’t love veggies, you’ll want to eat this pizza. If you’re looking for one final item to add to your Super Bowl menu, or just interested in changing gears on pizza night, try this loaded spicy Cajun chicken pizza. It won’t disappoint.

Cajun Chicken Pizza

Ingredients

Dough Ingredients:

  • 1 C water heated to 115°F
  • 2 1/4 tsp active dry yeast
  • 1/4 tsp granulated sugar
  • 2 1/2-3 C all purpose flour
  • 1/8 tsp salt
  • Olive oil

Pizza Ingredients:

  • 1 chicken breast
  • 1 Tbsp Cajun seasoning divided
  • 2 Tbsp unsalted butter
  • 1/2 C onion sliced
  • 1/2 C green pepper sliced
  • 3/4 C mushrooms sliced
  • Pizza sauce
  • 1 1/2 C shredded mozzarella divided

Instructions

  • In a stand mixer, add dry dough ingredients. Dissolve yeast and sugar in hot water, allow to sit for 5-10 minutes. With mixer turned on low, slowly pour yeast mixture into bowl. Continue mixing until smooth and dough pulls away from the sides of the bowl. Add additional flour as needed, a spoonful at a time only. Transfer to a lightly greased large bowl. Cover and allow to rise until doubled in size, roughly one hour.
  • Preheat oven to 425°F.
  • Melt butter in a medium skillet. Add chicken to skillet, sprinkling with 1/2 tsp cajun seasoning on each side. Continue cooking until the chicken is no longer pink in the center, roughly 4-5 minutes on each side depending on the thickness of your chicken. Remove and shred meat by hand or in a stand mixer with paddle attachment.
  • Prepare vegetables.
  • Lightly grease a baking sheet with olive oil. Stretch dough to fit pan. Lightly brush dough with olive oil, bake for 5 minutes.
  • After dough has partially baked, begin creating your pizza. Coat with sauce and half of the cheese. Arrange chicken and vegetables throughout. Sprinkle with 2 tsp cajun seasoning, or more if desired. Sprinkle with remaining cheese.
  • Bake for 12-15 minutes or until cheese is fully melted and bubbly. Slice and enjoy hot.

Notes

Recipe yields 1: : 12x16-inch pizza, roughly serves 4-6.
