Chicken Enchilada Salad with Caesar Dressing

Weekends are never long enough! I’m still waiting and hoping for three day weekends to become the new thing. More fun, more down time, less work. Or at least that’s the idea. More time to enjoy life.

It may not technically be something fun but I cleaned my car this weekend. Ahh! It feels so good to have the inside freshly vacuumed and wiped down. If only it would stay that way but, with three kids the inside gets dirty fast. Let’s see how long it stays clean this time.

We’re in the home stretch for this school year! If only we could get the Summer-like weather back! It had been so nice and hot. Then, as soon as we opened the pool it turned cold and rainy. It’s crystal clear and we’re just waiting for warm weather to heat it up! Any time now… And then I can use my fun new donut pool float!

Lunches can get boring real quick. I find that to be especially the case since I’m always having lunch with the kids. A while back I threw together a few leftovers in the fridge and I was immediately hooked. Now I go out of my way to make sure I have those same flavorful ingredients ready for a quick lunch. Even the kids are asking for it now! It’s that good! I never thought I’d see the day they’d be requesting salad, but it happened!

This is hands down my favorite salad. I’m currently obsessed with it. I combined two of my very favorite things – the spicy seasoned chicken from my chicken enchilada pizza and Caesar salad (and a whole lot of other yummy things). If you’re not a Caesar fan, you can absolutely substitute with something else… ranch would be an equally delicious option!

It has it all and a great range of flavors that all work beautifully together. Spicy seasoned enchilada chicken, sweet charred corn, creamy Caesar dressing, cheese and so much more! Get out of your boring salad rut and give this chicken enchilada salad a try. I promise you’ll love it!

Chicken Enchilada Salad with Caesar Dressing

A flavorful salad featuring seasoned enchilada chicken, charred corn, creamy homemade Caesar dressing and much more!

Ingredients

Chicken:

  • 1 chicken breast
  • 3/4 C chicken broth
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground black pepper
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/2 tsp salt

Toppings:

  • Romain lettuce chopped
  • Tortilla chips broken
  • Cherry tomatoes sliced in half
  • Colby Jack cheese shredded
  • Lime wedges optional
  • Caesar salad dressing
  • 1 ear of corn cooked and charred

Instructions

  • Halve the chicken breast and place in a small saucepan. Sprinkle with spices and top off with chicken broth. Cook over medium heat until cooked through. Remove chicken and shred, then return to saucepan and continue to cook until liquid has cooked off. Transfer chicken to a clean bowl. 
  • Prepare corn and toppings. 
  • In a large bowl, toss chopped romain lettuce with Caesar dressing. Arrange coated romain on a serving platter. Layer with broken tortilla chips, seasoned chicken, cherry tomato halves, charred corn and shredded cheese. Serve with optional lime wedges and additional dressing. 

Notes

Recipe serves roughly 2-4.
*Add desired amount of toppings per personal preference.

    This looks awesome! I eat salads a little more often in the summer since they’ aren’t so heavy. I hear ya on the summer lunches can get kinda boring! PBJ’s three days in a row and the kids are begging for something different. :)

    So this was pretty much the best salad I have EVER had! Used boneless thighs, since it’s what I had thawed out last night. Turned out amazingly.
