When you think of baking with chocolate, do certain flavor combinations come to mind for you? I love chocolate and mint or even strawberries and chocolate, though that one doesn’t always translate well to baking…it’s still freakishly delicious. A new favorite of mine is orange (really of any sort… clementine, orange etc) and chocolate. Amazing. There’s no going back now. It’s by far my new favorite when it comes to dipping (or pretzels… we’ll have to revisit that soon).

But one classic combination, or a tried and true flavor combination if you will, is chocolate and banana. I’m not really sure what it is, but it just works. You get the richness of the chocolate with the sweetness from the banana. And if you have ever baked anything with bananas before, then you know how amazingly moist they make your food.

When I went on the hunt for the perfect recipe to use Hershey’s spreads, I went to the source. They have a lot of great recipe ideas to use their chocolate, chocolate hazelnut and chocolate almond spreads. And low and behold, there were plenty of chocolate and banana options! I was sold on their chocolate banana muffins. Classic puffy muffins, full of flavor. But what makes these extra special is they’re a one (okay two) bowl muffin. One for the batter and one for the topping. No melting of chocolate required. And no special equipment needed!

And since chocolate and bananas are so good for you, in their own very special ways, these are totally acceptable even if you’re on a new year’s diet. But that’s just my opinion of course. And because I can’t be trusted with a dozen or more muffins in the house ever, this is a reduced portion, making only eight muffins! It’s the perfect batch to enjoy all week long or with your family and friends for a nice weekend gathering.

Chocolate Banana Streusel Muffins

Ingredients

Streusel topping:

  • 2 Tbsp granulated sugar
  • 1 1/2 Tbsp all purpose flour
  • 2 Tbsp unsalted butter cold
  • 2 Tbsp old fashioned oats

Muffin ingredients:

  • 3/4 C all purpose flour
  • 1/4 C granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 Tbsp mashed ripe banana roughly 1 banana
  • 1/4 C milk
  • 1/4 C Hershey's spreads chocolate, chocolate almond or chocolate hazelnut
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/2 C Hershey's chocolate chips

Instructions

  • Preheat oven to 350°F. Prepare a muffin pan with 8 liners.
  • In a small bowl, combine streusel topping ingredients until only small pieces remain. Set aside.
  • In a large bowl, combine dry muffin ingredients. Add in mashed banana, milk, chocolate spread, egg yolk and vanilla extract. Stir well with a wire whisk until all ingredients are combined and no streaks remain. Stir in chocolate chips.
  • Fill each liner 3/4 full with a large cookie scoop. Top off with streusel topping.
  • Bake for 25-30 minutes or until top bounces back when gently pressed. Cool in pan until cool enough to handle, roughly 5 minutes. Transfer to a wire rack to cool completely. Store in an airtight container for up to several days.

    I just wanted to say that I’ve now made these on multiple occasions and they are amazing! There was one time that I made these without the streusel topping for some reason and it was a mistake, I missed that sugary crunch so much! Anywho, keep it up Rachel, I think you’re my favorite food/recipe blogger now you’ve just got so many good and different ideas it makes it easy when I’m trying to add new ideas to what could easily be a mundane weekly meal/uninventive dessert.
