The other day I had a sudden need for a brownie. It was one of those days. The world was driving me crazy and only a brownie could help. It happens. I’m sure you know how that is. Only, I didn’t end up having brownies that day. In my crazy state, I convinced myself that making brownies in the afternoon meant that I wouldn’t be able to slice them until it was nearly too late to take decent pictures. So my craving would have to wait.

Seriously, this whole food blogging thing throws a major wrench into my cravings sometimes. Not cool.

Chocolate Chip Cookie Brownie Bar Recipe -

The extra time not making brownies was bad…but in a totally amazing kind of bad. It meant more time to create an even better brownie. It’s hard to choose between brownies and cookies so I decided to combine them. Top off rich homemade brownies with an amazing cookie dough. Why not?!

It’s a glorious mouthful. A deep double chocolate brownie base with the most amazing sweet and salty cookie dough known to man scattered over the brownie batter. The brownies end up perfectly chewy while the cookies are tender and slightly crisp on the outside. Amazing.

Chocolate Chip Cookie Brownie Bars

Two classic sweets combined into one amazing bar. Double chocolate chewy brownies topped off with spoonfuls of perfect chocolate chip cookie dough.

Cookie dough ingredients:

  • 5 Tbsp unsalted butter softened
  • 3 Tbsp light brown sugar
  • 3 Tbsp granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/8 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp coarse sea salt
  • 1 1/4 C all purpose flour
  • 3/4 C semi-sweet chocolate chips

Brownie ingredients:

  • 1/4 C unsalted butter
  • 3 oz bittersweet chocolate
  • 3/4 C granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 Tbsp unsweetened cocoa powder
  • 5 Tbsp all purpose flour


  • Preheat oven to 350°F. Lightly grease sides of an 8x8-inch baking pan and line with parchment paper, slightly overhanging two edges.
  • For the cookie dough: In a large bowl, cream butter and sugars. Lightly mix in egg and vanilla. Add baking soda, baking powder, salt and flour, mixing well until no streaks remain. Finally, add chocolate chips and mix until dispersed throughout. Set aside.
  • For the brownie batter: Melt butter and chocolate in a double boiler, set over a saucepan with simmering water. Stirring gently until completely melted and smooth. Remove from heat, whisk in sugar, followed by egg and vanilla. Whisk in cocoa and salt. Gently fold in all flour until combined.
  • Pour brownie batter into prepared pan, spreading out evenly with an offset spatula. Top off with large spoonfuls of cookie dough, press down gently. Bake for 25-30 minutes.
  • Cool in pan completely before slicing. Store in an airtight container.

    Food blogging is hard because you do have to be so patient. Bake something one day, then photograph next day when the light is better. It’s quite rough sitting around waiting for tomorrow with treats sitting around, untouched!
    Sometimes layer bars like these don’t seem to bake properly and end up overly greasy/fudgy, but yours look perfect!

    This recipe was vreally easy and fast to make – pretty failsafe too! Went down a treat with the fam and friends – unfortunately for me, the textures of both the brownie and cookie were still very distinctive and…i like neither brownies nor cookies. I was hoping for something drier than a brownie but chewier than a cookie hehe

    Question-I made these the other day-loved them….do you think this recipe for brownies would work for regular brownies? I loved the dark melted chocolate taste in them!

      It definitely would, but you would need to at the very least double the ingredients for the brownies.

    Wow, these are awesome, even though I used 1/4lb of butter instead of 1/4cup in the brownie mixture…oooops! So, needless to say, the bottom layer is SUPER buttery, rich, and gooey…but the whole shebang still tastes great. I will definitely be making these again, and maybe even correctly next time ! :)

    Stumbled upon your recipe looking for something to make from scratch. This fit the bill. However, note to self, don’t start at 6pm!! It didn’t take long to get both batters made, but for whatever reason, it took almost an hr for the browine dough to cook. I actually had to flip the pan onto a cookie sheet and bake for 10 minutes so as not to burn the cookies!! Waiting for it to cool off was killer!! Overall, the best of both worlds!! Oh, I did add a layer of walnuts between the 2 batters, just b/c I love nutty brownies.

    On the recipefor the cookies it says 11/4c of all purpose flour…is that a mistake because after making this dish it came out to crumby and uneatable. If this is a mistake then I’m letting you know so that future viewer won’t make the same mistake I did.

      I’m sorry to hear you had trouble with this recipe, but 1 1/4 cup of all purpose flour is the correct amount and does work, as you can see from the photos accompanying this recipe. Be sure you are measuring accurately and mix well. The ingredients will come together.

      You need to be careful melting chocolate in the microwave as it can burn easily. Reduce the power and heat in 20-30 second intervals.

    I made these with a friend a while ago and they turned out great and delicious.
    Unfortunately he never gave me the recipe and I decided to make these to serve with ice cream at a birthday party.
    I found this on pinterest and decided to make them. I am not sure what happened but they were not what I expected. The brownie Burned and was crunchy. The cookie was too hard (too much flour). It was overall a bad desert and very embarrassing when I tasted it the tome it was served… with everyone.
    I wished they turned put better because I really liked it. I guess I have to wait to get a better turn out with my friend.

      The ingredients stated in the recipe are the correct amounts and do turn out as you can see from the pictures. Measuring correctly and knowing how your oven cooks is important for baking. I hope you have better luck the next time you try them.

    I never comment on blogs, but I just have to praise these amazing sweet treats. Wow! These brownies/cookies are the best thing I have ever eaten. Seriously! If I didn’t live with a husband who eats everything in sight I would have eaten the whole pan myself. Tip! Put them in the fridge with a lid and savor them over a few days. They only get better!!! Fudge on the bottom, the perfect salty cookie on top. Wow, just wow. I will be making these again & again & again!

    Rachel , my daughters roommate from college made these & left them on my dining room table! OMG to die for! I love them! That was 3 weeks ago! I had to keep reminding her of the promise they both made to get the recipe to me! I make great soft cookies & have tried to combine brownie & my cookie recipe before but I lost that recipe! But your recipe I pray I never loose! For the folks who use the recipe & If the result are that cookie is not cooking enough or over cooking: If you don’t use parchment paper , yes the bottom of the cookie will burn! Or, buy an oven thermometer tester to verify that your oven is reaching optimal temperature. An easy find in Bed & Bath or like store in silverware/bakeware section. This has happened to me in the past, with a gas stove I had !. Nothing would come out baked right ! I hired an electrician , who also worked on gas stoves! He determined that I had to replace the heating element on the stove. The electrician suggested for the amount of baking I was doing that the next stove I purchase should be more like what the restaurants use. ! Paula
