Four Cheese Macaroni and Cheese
A super cheesy and flavorful macaroni and cheese recipe, featuring four varieties of cheese!
Have you ever heard the song “all of me”? There is this line in it that says “love all of your curves and edges”. Only the first time I heard it I totally didn’t hear it well enough to understand what he was saying and decided to make up my own version being ‘I love all of your curds and whey’. I know… I know. Totally dumb but I think it’s kind of funny every time I hear the song now even though I know what he’s really singing.
I do that a lot, change lyrics to songs. This one time I was doing it really loud with really ridiculous lyrics to an otherwise very normal song and then the doorbell rang… UPS had just dropped off a package at the front door. At least he didn’t need a signature and just dropped the package and left. I got a good laugh out of it.
Also, speaking of music, I hate a love/hate relationship with Hayden Panettiere’s singing and songs on Nashville. I can’t help but picture her as the cheerleader from Heroes still so I really want to not like her singing but I love it. And I can’t wait for the show to come back with new episodes. This whole let’s play reruns until the Olympics is over is kind of annoying. And let’s not discuss the fact that Scandal has been gone for what… three months… maybe more? Counting the days until it’s back on. Are you just as excited?
Anyway…Food! Specifically, this super cheesy and awesome macaroni and cheese, containing FOUR varieties of cheese. It’s necessary. You need this in your life. It’s crave worthy and should be not only on your table but in your belly asap.
I’ll never go back to a one cheese macaroni again. Never ever again. We’ve progressed from one, to two, to three and now four cheese macaroni recipes. More cheese is always a good thing. I know you agree. Be sure to add this to your dinner menu!
Four Cheese Macaroni and Cheese
Ingredients
Macaroni and cheese:
- 3 1/2 C pasta roughly 3/4lb
- 2 Tbsp unsalted butter
- 2 Tbsp all purpose flour
- 1 C milk
- 1 C heavy cream
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 4 oz Havarti cheese shredded
- 1/4 C Parmesan
- 4 oz mild cheddar cheese shredded
- 4 oz extra sharp cheddar cheese shredded
Topping:
- 2 Tbsp Parmesan
- 2 oz mild cheddar cheese shredded
- 1/2 C Panko breadcrumbs
- Olive oil
Instructions
- Preheat oven to 375°F. Set aside a 2qt baking dish.
- Bring water to a rapid boil in a medium-large saucepan. Cook pasta according to package instructions or personal preference.
- In a double boiler over simmering water melt butter, whisking in flour. Slowly whisk in milk and cream, followed by seasonings. When liquid is warm, add half of the cheese. Whisk occasionally until fully melted. Add remaining cheese, continuing to whisk occasionally until fully melted. Keep warm over medium-low heat.
- Drain pasta. Add to un-greased baking dish. Pour cheese sauce over pasta. Top off with Parmesan cheese and shredded cheddar. Coat with plain Panko breadcrumbs. Spritz with olive oil. Bake for 25 minutes or until breadcrumbs are lightly browned and cheese is bubbly. Serve immediately.

Yummy mac and cheese. I am always changing song lyrics too. I try not to sing out loud since I know I do this. My husband finds it so funny when he hears what I think they are versus the actual words.

Love homemade mac n cheese. Four cheeses just make it yummier! I’m loving the Olympics, but am a little down about the shows not being on as well. I was most upset last week about reign. Pathetic I know.
I’ll honestly be happy when the olympics are over. I used to love them but they’re just kind of boring these days. And missing a favorite show is never pathetic :)
