We made it through the blizzard! No loss of power or anything to complain about really, besides the amount of snow (32 inches)! I swear with every storm we somehow end up in a sweet spot that just gets dumped on. This storm was no exception.

We were prepared for the worst, as I know many were. Better to be safe than sorry! Plus, bread will be eaten and water doesn’t go bad. Want in on a little secret? When a storm is coming, don’t go to the grocery store where it will inevitably be mobbed. Go to Target. Ours was a practically a ghost town. Seriously. I went Monday after seeing how mobbed the grocery store was. I already had everything I needed, but you know… non-essentials that help with your sanity while being trapped inside with kids bouncing off the walls. More snacks, coloring books etc.

I realized recently that I don’t have nearly enough regular non pasta or soup type entrees, so… here’s dinner! A non-pasta or soup for dinner, that’s tasty and super easy to whip up! Seriously, less than 20 minutes and you’ll have dinner on the table. I love quick meals like this!

Butter fried chicken breasts coated in a flavorful lemon-pepper seasoning. Refreshing, easy and an absolute must make! Serve with a green salad, rice or vegetables… and of course an extra spritz of fresh lemon juice! It’s sure to be a new family favorite!

Lemon-Pepper Skillet Chicken

Lemon-pepper seasoned chicken, cooked in a butter sauce. An easy and quick dinner for any night of the week!

Ingredients

  • 2 large chicken breasts halved (or 4 small breasts)
  • 1/4 C unsalted butter
  • 1/3 C all purpose flour
  • Zest of 1 lemon
  • 3/4 tsp ground black pepper
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 lemon sliced

Instructions

  • Flatten chicken breasts using a meat tenderizer to between 1/4 and 1/2-inch thickness. Add flour and chicken breasts to a large bag. Toss to coat well. Set aside.
  • Combine lemon zest and seasonings in a small bowl. Season both sides of each chicken breast well.
  • Melt butter in a 10-inch skillet over medium-high heat. Add seasoned chicken breasts, cooking 2-4 minutes per side. Remove chicken breasts from skillet. Cook lemon slices for 30 seconds on each side. Return chicken to pan, cook for an additional minute.
  • Serve with a green salad, rice or vegetables.

    Everyone who is reading this, YOU HAVE TO TRY MAKING THIS! I have been making this recipe for about a year now and EVERY single person I have made it for has loved it and asked for the recipe. This is the juiciest chicken you will ever have and it has so much flavor. Not bland and Not dry. This is a staple in my house and everyone constantly craves this and asks me to make it. Do yourself a favor and make this chicken!!
