Red White and Blue Potato Salad
Red white and blue potato salad with a creamy mustard dressing. The perfect patriotic side dish!
I’m pretty sure there is some absurd statistic about how many accidents occur in or around the home and usually just doing regular everyday things. Like that moment you walk into the open dishwasher and feel like someone smashed your ankle with a sledge hammer. And you find yourself yelling ow ow ow, limping to a seat because it hurts so bad… one child concerned and another seemingly amused but alert and aware of the pain I’m in.
That was probably the worst pain I’ve experienced in recent times. And days later, it’s still sore.
And while we’re on the topic of accidental self-inflicted injuries, why is the funny bone called that? Because we all know it’s not funny for the person experiencing the pain. I think we should petition to have that one changed.
I’ll be honest. I’m kind of in love with potatoes. Okay, you knew that. Or I hope you knew that. And if you didn’t, then you know now. So we’re all caught up and on the same page.
From now till the weather grows chilly again, barbecues will be the thing. So, clearly everyone needs some good recipes to make or bring to these fun summertime gatherings. Potato salad is a must! And this one pairs a few of my favorite things together… sour cream and chives, Dijon mustard and well… the obvious star of the dish – potatoes! You can easily substitute yogurt for the mayo and sour cream, but I like the extra tanginess of the sour cream, meshing with the chives, mustard and spices. You can also opt to not include the red pepper flakes, but I think a nice kick is always a good thing! Plus, it’s really not that much in the grande scheme of things.
An easy red, white and blue potato salad with a creamy mustard dressing, perfect for the 4th of July and all of your Summer get togethers! A classic Summer side dish with a fun patriotic twist!
Red White and Blue Potato Salad
Ingredients
- 1/2 lb Yukon gold potatoes
- 1/2 lb purple potatoes
- 1/2 lb red potatoes
- 1/2 C sour cream or yogurt
- 1/4 C mayonnaise
- 2 Tbsp white wine vinegar
- 1 Tbsp Dijon mustard
- 1 tsp granulated sugar
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 clove garlic minced
- 1 Tbsp chives minced
- 1/4 tsp red pepper flakes optional
Instructions
- Scrub and chop potatoes into equal sizes.
- Add red and white potatoes to a small saucepan, cover with water. Bring to a boil, cooking for 15 minutes.
- Add blue potatoes to a small saucepan, cover with water. Bring to a boil, cooking for 10 minutes.
- Drain potatoes, dry on a paper towel lined baking sheet. Transfer to a large bowl.
- In a small bowl, whisk together remaining ingredients. Add to potatoes and toss well to coat. Chill until ready to serve.
