This past weekend was our 13th wedding anniversary. Three towns, many cars, three kids, 4 cats and a dog later… we’re still going! We celebrated in the most boring adult way ever… chores! We finally got the pool prepped and closed for winter. All of the floats and toys put away. Lots of yard work, which I took zero part in because I was on dog duty. Which was the other reason for our super exciting anniversary weekend.

Our sweet girl had her big girl surgery. I’m completely amazed at how fast she bounced back. She was groggy the night after her surgery, but by the next morning she was back to her usual self. Trying to contain a puppy that thinks she can behave like usual isn’t easy, especially when she’s already 45 pounds of craziness. Seven more days to carry this giant fur-baby up and down stairs, even though her behavior would suggest she doesn’t need me to… We’ll follow the vet’s orders anyway.

Totally unrelated but we just watched the movie Logan over the weekend. It’s definitely not your average X-Men movie. It’s the darkest by far and definitely a bit sad but we still really enjoyed it. I’m sort of wondering if the characters introduced in this movie are potentially the new cast. I can’t see them just dropping the series completely, especially since there’s still plenty they could do with it. I guess only time will tell!

Between the weather turning colder and weeknights being crazy busy, we’re all in need of some super easy dinners… right?! It’s time to dust off your slow cookers!

Once fall hits, I’m completely obsessed with soup until the weather warms up again. Not only is it an easy meal to whip up but it’s super comforting and the options are endless! I already have a well loved chicken tortilla soup recipe here, but there’s always room for change… and cheese! Cheese makes everything better, especially soup!

This cheesy chicken tortilla soup is not only ridiculously tasty, it’s also super easy since it’s made in the slow cooker! Just toss your ingredients in and come back later to an amazing meal! Barely any hands on time needed! A guaranteed family favorite and a must make this fall! It’s easy enough to whip up any day of the week! Slow Cooker Cheesy Chicken Tortilla Soup

A flavorful recipe for cheesy chicken tortilla soup, made even easier in the slow cooker! A comforting meal for any night of the week!

Ingredients

  • 1 1/2 lb boneless chicken breast
  • 15 oz corn drained
  • 15 oz petite diced tomatoes drained
  • 15 oz black beans rinsed well and drained
  • 1 C yellow onion chopped
  • 1 C green bell pepper chopped
  • 1 jalapeño minced
  • 3 cloves garlic minced
  • 1 1/2 tsp chili powder
  • 2 tsp salt
  • 1 tsp ground white pepper
  • 1/4 tsp cumin
  • 1/8 tsp red pepper flakes
  • 4 C chicken broth
  • 2 bay leaves
  • 8 oz cheddar cheese freshly shredded **see notes
  • 1 C heavy cream
  • 1/4 C flour *see notes
  • Seasoned tortilla strips
  • Additional cheese for topping
  • Chives for topping

Instructions

  • To the bowl of a 5-6 quart slow cooker add chicken, vegetables, beans, spices, chicken broth and bay leaves. Cook on high for 4 hours or on low for 8 hours. Discard bay leaves. Remove chicken and shred with forks, set aside.
  • Grate an 8oz block of cheddar cheese, adding to the warm soup in batches. Stir to melt and combine.
  • Whisk together flour and heavy cream until smooth and combined well. Stir into soup. Return shredded chicken to soup. Cover and cook for an additional 30-40 minutes.
  • Serve warm with optional chives or green onions, additional shredded cheese and tortilla strips.

Notes

*2Tb cornstarch may be substituted for a gluten free option.
**For best results, freshly shred a block of cheese. Pre-packaged shredded cheese will not melt as well.
Homemade or store bought seasoned tortilla strips may be used.
Recipe serves roughly 8-10.

    What is the nutritional value of the soup, I’m on a low carb lifestyle and I would love to try and make this soup. Thanks for sharing. It looks very good and easy to make.
