This weekend I finally got to watch Furious7. I had every intention of seeing it in the theaters, but it never happened… so I had to wait. It was worth the wait. I know I’m likely one of the last to see if but if you haven’t seen it yet, you must! It was so well done, just as all of the others were. Action packed and generally a fun watch. I expected to cry, but I didn’t. Though, I’ll admit the end was the hardest. Perhaps if I’d seen it sooner after Paul Walkers death, it would’ve been a different story. I’m looking forward to the 8th and final movie in the series, but we have a bit of a wait before seeing that…2 years or so anyway.

We also played one of our favorite games. I play random music and make the Mr guess the band/artist. It can get pretty comical when it’s a super random band and he gets it in just a few seconds. Plus, it’s a great way to hear a lot of old favorites that I’d otherwise not here. Even some of my favorites, that would sadly now be called classics, aren’t played on the radio anymore, so YouTube is my best bet to hear them again!

Has anyone else been disappointed by the season premieres so far? I know they typically don’t have the same wow factor as the finales but I still expect more than I’ve been seeing. I’m almost ready to give up on a few old favorites after just an episode. I’ll give them a bit longer before deciding for sure and hope they’re able to get back into the swing of things sooner than later.

It’s a fun blend of your favorite chicken and vegetable soup with a fun flavor twist! This slow cooker chicken soup has a creamy coconut base with a hint of lime and lots of flavor! Since it’s a super easy slow cooker dish, that means it’s perfect for any night of the week!

Make a minimal effort recipe even easier by preparing the veggies and chicken ahead! Then all you have to do is toss everything in the slow cooker in the morning and you’ll come home to a comforting dinner ready to devour!

Slow Cooker Coconut Lime Chicken Soup

Easy and flavorful slow cooker coconut lime chicken soup. A perfect dinner for any night of the week!

Ingredients

  • 1 1/2 lb boneless chicken breasts uncooked
  • 1 jalapeño diced
  • 1 C yellow onion chopped
  • 3/4 C carrots sliced thinly 
  • 3/4 C red bell pepper chopped
  • 3 cloves garlic minced
  • 3/4 tsp curry powder
  • 1/8 tsp ground ginger
  • 3/4 tsp chili powder
  • 1/4 tsp paprika
  • 1 1/2 tsp salt
  • 3 C chicken broth
  • 1 : 15oz can coconut milk
  • 2 Tb lime juice
  • Cilantro for garnish

Instructions

  • Prepare vegetables and trim chicken of any fat. 
  • Place vegetables, chicken, spices and chicken broth in a 5-6 quart slow cooker. 
  • Cook on high for 4 hours, or low for 8 hours. 
  • At the end of the initial cook time, whisk coconut milk until smooth and add to slow cooker. Stir gently until well combined. Cook or an additional 30 minutes. 
  • Prior to serving, stir in lime juice. 
  • Garnish with cilantro, if desired. 

Notes

Recipe serves roughly 4-8.

    I actually haven’t even watched any of the premieres yet. I’m waiting for Vampire Diaries in Oct ;) Judge me!
    In other news: I am obsessing over this soup! I LOVE that you brought some “summery” flavor into a slow cooker meal! Pinned!

    I don’t know how I cried and you didn’t at the end. I could probably still cry thinking about the fact that Paul Walker is actually dead! Anyway…this soup. I freakin’ love the coconut +lime combo when it comes to soups. I could eat this all winter long.

    Coconut + Lime = LOVE!!! Ok, so, weird story: My hubby services fire extinguishers and happened to be doing the LA Morgue 2 days after Paul Walker’s death :( He ended up seeing a severely burned body. So, so sad!! Pretty sure I would cry if I watched the movie even now!

    I haven’t seen it yet and both my husband and I really want too! The evenings just seem to get away from us and we just go to bed, I know we are so boring!! Now this soup isn’t boring and I can’t wait to try it! It is finally starting to cool off here so I can think about making some soups.

    This soup is absolutely amazing! I discovered this recipe about 2 months ago and this is my third time making it. The soup is delicious and the leftovers are even more flavorful. I like to serve it with rice on the side. Cant beat a crockpot recipe with a very simple prep as well! Easy peasy.
