Slow Cooker Corn and White Bean Chowder
A cheesy vegetarian chowder, loaded with vegetables and beans. Red pepper flakes give this easy slow cooker dish a spicy kick!
Winter has been pretty dull this year, until now. Normally we would’ve likely had several decent storms by now, but that hasn’t really been the case this year. I guess Mother Nature is making up for it because there was a moderate storm over the weekend and tonight a blizzard hits, promising 20-30″ of snow and high winds. Things like ‘epic snowfall amounts’, ‘catastrophic’, ‘life threatening’ and even ‘one for the record books’ are being thrown around. That isn’t exactly comforting. It’s even being compared to the blizzard of ’78 and I sure have heard plenty of stories from that one. I only hope it doesn’t get that bad. I’m used to crazy storms, having lived in New England my entire life but, I’d rather live without these ‘epic’ storms if I could.
I’ll be keeping my fingers crossed we don’t lose power, not just for heat but… Scandal and Suits both return this week. Priorities, right? I’m probably jinxing myself right now talking about this though!

An easy and spicy vegetarian chowder, loaded with corn, potatoes and white beans! Comfort food at it’s best and perfect for the entire family!
Just toss the ingredients in and let the slow cooker do the work for you! Go about your day doing whatever or nothing at all, and return to a fabulous soul warming meal!
I highly suggest topping it off with additional cheese and/or bacon. So good!

Slow Cooker Corn and White Bean Chowder
Ingredients
- 1 C yellow onion chopped
- 1/2 C red bell pepper chopped
- 3 cloves garlic minced
- 7 oz can whole kernel corn drained
- 2 : 15oz can northern white beans drained and rinsed well
- 4 C potatoes peeled and chopped
- 1 tsp dried thyme
- 1 1/4 tsp ground black pepper
- 2 tsp salt
- 1/4 tsp red pepper flakes optional
- 3 C chicken broth*
- 4-8 oz white cheddar cheese shredded
- 1 C heavy cream
- 1/3 C all purpose flour*
Instructions
- Add vegetables, beans, seasonings and chicken broth to the bowl of a 5-6 quart slow cooker. Cook on high for 4 hours (or low for 8). Stir in shredded cheese until melted. Combine heavy cream and flour, whisking until smooth. Pour into soup, stirring to combine. Cover and continue cooking for an additional 30 minutes, or until potatoes are tender and chowder has thickened.
- Serve warm
