I don’t know about you, but I’m getting all antsy and excited for Fall. Cooler weather, cozier clothes, leaves changing color… but best of all… apples and pumpkins. Oh my! I’ve had a ton of fun coming up with ice cream recipes and other desserts over the past handful of months but cool weather comfort food is what I really enjoy. Are you as excited for all things Fall as I am? Because, I’m super excited. This is my absolute favorite time of year. The only thing that I don’t like about it is that Winter is right around the corner. And that brings cold temps and even worse… snow and ice. Brrrr. So let’s try to savor Fall for as long as humanly possible. I’ll be kicking things off in full gear the second September hits, so be ready.

Only just when I’ve given up on Summer, ready to put it all behind me and move on… we get a few hot days again. What gives August? I’m doing my best to try and live up Summer for the last week or so until school starts back up for us. Fingers crossed we can squeeze in one more pool day and lots of outdoor time. And … maybe a trip to the apple farm for some early apples. I can’t help it! ;)

Something else I’m obsessed with lately is cookies. These ones in particular are freakishly delicious. They’re a nice blend of a bunch of my favorites only better. They’re a classic chocolate chip cookie, full of flavor and super soft… that stay soft. No need for a slice of bread to keep these babies soft. They’ll stay that way on their own. These are absolutely one of my favorite cookies. They’ll be made over and over again. I promise you’ll agree and do the same.

The great thing about this dough, since you have to chill it ahead (which might seem like a pain, but trust me it’s worth it), you can pull it out to bake fresh cookies right in time for the bus to drop your kids off in the afternoon. Or bake some up while you enjoy dinner, so you can enjoy a warm cookie for dessert. Because not much beats a warm freshly baked homemade cookie.

Soft Batch Chocolate Chip Cookies

Ingredients

  • 10 Tbsp unsalted butter softened
  • 1/2 C granulated sugar
  • 1/2 C light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp coarse sea salt
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 C all purpose flour
  • 1 1/2 C semi-sweet chocolate chips

Instructions

  • In a large bowl or stand mixer, cream butter with sugars. Mix in eggs and vanilla, followed by salt, baking powder, baking soda and flour. Mix well until ingredients are fully incorporated. Stir in chocolate chips by hand. Cover and chill overnight.
  • Preheat oven to 350°F. Prepare a baking sheet with parchment paper or a silicone baking mat. Using a medium scoop, place cookie scoops at least 2 inches apart on prepared baking sheet. Press additional chocolate chips into tops of cookie dough balls if desired.
  • Bake for 10-11 minutes. Allow cookies to rest on baking sheet for 2 minutes prior to transferring to a wire rack to cool completely. Repeat process with remaining dough.
  • Store cookies in an airtight container.

    Im stoked for FAll…but like you, dreading Winter. I hate it so much..don’t ask why I never moved to a warmer climate..makes no sense.
    Soft cookies are the only kind Ill eat, these look perfect!

      I love New England but I just can’t stand the winters. Cold I could manage but all of the snow ugh. No thank you. If moving were easy I’d do it ;)

    I baked these cookies today, and the texture is wonderful: Super soft, indeed. However, I think they’re a bit bland and I’d like to pump up the flavor. I used fleur de sel, which gave it the right salty notes; and really good Nielsen Massey vanilla. As the recipe didn’t specify light or dark brown sugar, I used light. Perhaps dark brown sugar would give it more depth. Anyone have any other suggestions for making the cookies more flavorful? The only thing I can think of, other than the sugar, would be to brown the butter …

      Personally, I found these to be plenty flavorful as a nice simple and classic soft cookie. If you want something kicked up more, by all means adjust the flavoring with more vanilla, dark brown sugar and even an adjustment to the butter.

    These look wonderful. I have one kiddo that doesn’t share the rest of the family’s love for ice cream, so i think that i will mix up a batch to portion out and freeze dough balls to make cookies for him. :)

    Hi, I am wondering if I still need to press the scooped doughs just to flatten them on the baking sheets? Does the dough flatten all by itself while getting baked? Thanks Rachel. I’m going to try baking chocolate chip cookies for the first time. I was looking for a good recipe. Your photos look appealing and the cookies seem like those I see sold commercially.

      It’s always best to chill dough for at least several hours to firm it up before scooping and baking. This helps to prevent the cookies from spreading too much in the oven.
