Strawberry Ice Cream
Creamy homemade strawberry ice cream with fresh strawberry chunks throughout.
Next to apples, strawberries are my favorite fruit. So sweet and juicy. As a kid, I remember picking strawberries from my backyard and being given baskets of fresh strawberries from neighbors. The best Spring/Summer fruit… depending on your region. In New England, we don’t see really good strawberries until June. It amazes me that strawberry season has apparently already passed for California. It just seems so early.
I am truly jealous of the longer duration fruit and vegetable seasons other areas of the country have, BUT I definitely prefer to enjoy my fresh and local strawberries in the warmer months. They kind of go hand in hand with watermelon season, or at least in my mind. And that probably has a lot to do with the growing seasons I’m familiar with.
Something that definitely isn’t seasonal, ice cream. But, this definitely has a fun seasonal flavor. Ripe, juicy strawberries. It kind of screams Summer to me. And none of that funny artificially flavored strawberry business. I love strawberry ice cream, but it has to be naturally sweetened and with chunks of strawberries. There is nothing more depressing than getting a bowl, scoop or cone of strawberry ice cream only to find out there isn’t a single piece of actual fruit in it. It should be packed full of fruit.
This one is! It had to be.
Easy, homemade creamy strawberry ice cream loaded with chunks of fresh juicy strawberries. And because strawberries freeze so well, you can make this year round! Just remember to thaw them first to pull out all of that amazing strawberry juice! This is an absolute must make for strawberry fans!
Strawberry Ice Cream
Ingredients
- 3 C strawberries
- 1 C granulated sugar divided
- 1 Tbsp lemon juice
- 2 C heavy cream
- 1 C whole milk
- Pinch salt
- 1/2 tsp vanilla extract
- 5 large egg yolks
Instructions
- Prepare strawberries by removing stems and chopping into 1/2-inch size pieces. Add strawberries to a large bowl with 1/4 cup granulated sugar and lemon juice, toss to combine. Cover and chill 4-6 hours or overnight.
- Meanwhile, add 1 cup heavy cream and vanilla to a medium bowl with mesh strainer set on top. Set aside.
- In a medium saucepan over medium heat, combine remaining 3/4 cup granulated sugar with whole milk, 1 cup heavy cream and salt. Stir to dissolve sugar. When mixture begins to steam, while whisking, pour 1 cup hot liquid into egg yolks. Pour egg mixture into saucepan. Stir occasionally, cooking over medium heat until mixture coats the back of a wooden spoon or spatula. Pour through mesh strainer into remaining heavy cream. Cool over a water bath and chill overnight.
- Prior to churning, combine strawberry liquid and custard base, reserving strawberries. Churn according to manufacturer's directions, adding strawberries in during the last 10 minutes of churning.
- Transfer mixture to a freezer safe container. Freeze until solid. Allow ice cream to sit for 5-10 minutes at room temperature prior to serving. Heat a metal ice cream scoop if necessary for easier scooping.
