If you’ve been around for a while, or at least since September, you know how much I am completely obsessed with apples…and pie. There are worse things to be obsessed with of course, but did you know that my love for cranberries is right up there too? It’s even well above pumpkin. I know that pains many of you to hear, but it’s true. I still love pumpkin dearly, it just holds third place. A bronze medal is totally acceptable, then again… maybe if you’re not the one getting it. So sorry pumpkin.

So, I have a bag of apples still sitting in my kitchen because when I buy apples I don’t buy a mini bag. I buy the biggest bag they offer at my absolute favorite local apple farm, which just so happens to be big enough to hold a large baby or exactly a 1/2 bushel. It’s a lot. The beauty of buying local is they last an insane amount of time too. I’ve had these babies for easily a month or more!

The other day I decided I’d whittle down my supply of apples and make a pie, but then I got to thinking… why not throw in something else equally as tasty and seasonally appropriate which is where cranberries come in to play! Everyone loves pie. If you don’t, you should go see the doctor because clearly there is something wrong with you. Then again, it’s totally okay because it means I can have your slice!

An easy homemade crust is lightly flavored with cinnamon, then topped off with a sweet and tangy mixture of fresh apples and cranberries. The finale is a cinnamon-sugar oat mixture sprinkled over the entire pie. It’s so good you won’t want to share.

Apple Cranberry Crumb Pie

An easy homemade crust, filled with fresh apples and cranberries and topped off with a crumbly cinnamon-sugar and oat mixture.

Ingredients
 

Dough ingredients:

  • 1 1/2 C all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 C cold unsalted butter, cubed
  • 3 Tbsp ice water

Pie ingredients:

  • 4 large apples, 5-6 cups
  • 3 Tbsp all purpose flour
  • 3/4 C granulated sugar
  • 2 tsp cinnamon
  • 1 C cranberries, fresh or frozen

Topping ingredients:

  • 1/4 C old fashioned oats
  • 1/2 C granulated sugar
  • 1/4 C all purpose flour
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 C cold unsalted butter, cubed

Instructions
 

  • Preheat oven to 425°F.
  • Combine first 4 dough ingredients in the bowl of a food processor. Pulse until small pea size balls form. Add ice water, blending until mixture holds together forming a smooth ball of dough. Transfer to a silicone work mat, or floured work station. Lightly cover with plastic wrap, roll out to 1" or more beyond the size of your pie plate. Carefully transfer to pie plate, flute or crimp edges as desired.
  • Prepare your filling by peeling, coring and slicing apples into thin pieces. Add to a large bowl with cranberries and remaining dry filling ingredients. Toss to coat. Add to prepared pie dish.
  • In a medium bowl add topping ingredients, work with a pastry blender until mixture is crumbly. Spoon mixture over entire pie.
  • Bake at 425°F for 10 minutes, then reduce heat to 350°F for 60-70 minutes. Remove from the oven and allow to cool before slicing. Enjoy with fresh sweetened whipped cream or vanilla ice cream. Store any remaining pie in the refrigerator.

Notes

Yields 1: 9 1/2" pie or serves roughly 6-8.
