Do you have a week or two out of the year that is just especially emotional or filled with memories? I guess the two kind of go hand in hand because both sad and happy memories bring up emotions. This is my week. It’ll always be my week.

Today would have been my grandfather’s 91st birthday. It’s been 7 1/2 years since his passing. A day I’ll never forget. Tears streaming as I write this. I miss him. We had a special relationship. When I was younger we exchanged letters. I don’t know many kids that write letters back and fourth with their grandparents… or anyone at all anymore for that matter these days. It was always a treasured moment to receive a letter in the mail and then write back. I wasn’t always as timely as I should have been, but no matter how long it took me to send a letter, I knew I’d be receiving one back. I saved every letter. It’s the closest thing I have to him anymore.

Tomorrow is a day full of mixed emotions for me. The 4th of July has always been one of my favorite days. Fireworks, sun, summer, food – just a great day. Who cares about days where you get presents. It’s just stuff. But the 4th of July is a memory making day. It has a wow factor and a fun factor. But 7 years ago, I lost another amazing man in my life – my father in-law. He was a great man full of spirit and wit, taken from us too soon. Cancer sucks. I wish my kids would’ve had the chance to meet them both. How do you bounce back from two major events and try to make happy memories of what was once a cherished day? A baby.

Our oldest turns 6 tomorrow. I swear it was all meant to be. She brought joy back to this week and day. A blessing in disguise perhaps. I’m always amazed by how much she’s grown. Not just physically but in general. Never in my life did I actually think of the day when she would be able to read a book to me or write notes for us or to her friends. I also see so much of me in her and that kind of scares me. We really are our parents and thus… she is me. Think about that for a minute. How were you as a kid? A glimpse into your future/past. Don’t tell me that’s not scary.

And of course to continue on with my s’more loving … a super easy last minute recipe you can whip up for your friends and family or just yourself. It’s your typical s’more but 100x better, so long as you enjoy sweet strawberries. Glorious strawberries. They make everything better… kind of like bacon, only I promise to never put bacon in s’mores because I’m really trying very hard to not add bacon to my sweets. Baby steps with the whole sweet/salty thing.

The key here is so make sure you use just the right sized marshmallow. Too much and you’ll have a flooding of marshmallow, which isn’t necessarily a bad thing but it’ll be messier than usual. Still tasty. Use 1 regular marshmallow or just slightly less than half of a mega marshmallow.

I promise you’ll fall head over heels in love with this variety of s’mores.

Strawberry S'mores

Traditional s'mores sweetened up with slices of fresh strawberries for an added boost of flavor and pop of color!

Ingredients
 

  • Graham crackers
  • Hershey's milk chocolate bars
  • Marshmallows
  • Fresh strawberries, sliced

Instructions
 

  • Place chocolate and marshmallow on a graham cracker base. Microwave for 15 seconds, or cook as desired. Top off with strawberry slices and a top layer of graham crackers. If making these indoors, use a kitchen torch to toast the marshmallow.
