You know what stinks? Wanting to workout. Actually working out even and then having to stop because you hurt yourself. It’s nothing serious. It’s totally stupid too. And it should’ve have even happened. I’ve never had this issue while working out. Except for maybe while breaking in cleats for field hockey. Blisters. Seriously. Honestly, they’re barely blisters at this point. They’re already nearly non-existent but my heels are still sore like they’re there so I know I need to take a break for a bit. And it’s not even like I walked or ran a considerable distance. Nope… 4 miles on the treadmill while watching a show. You shouldn’t even have to ask which show at this point, right? But seriously… blisters.

Saturday it was due to sneakers that clearly weren’t ideal for that activity. They’re better suited to living room workouts, not the treadmill. My heels weren’t as secure as they should’ve been and thus, sore heels. Only at that point it wasn’t even bad. I could sense they were there. I could just barely feel them. Then Sunday I decided to throw some stuff on my heels, plus bandaids and different shoes. All hoping it would be okay, add a little extra cushion and allow me to workout like the day before. Initially all was okay, then slowly went downhill. I probably did just more than half of the workout that I got in on Saturday, before having to call it quits.

Maybe it was a sign that I should’ve instead snacked on some fresh cookies or this ice cream…

Because let me tell you… this ice cream was delicious. Almost shockingly so. I did some research, poking around the usual suspects (like David and Jeni’s books) for ideas on how to approach this. Every corner I turned, every cheesecake ice cream I found anywhere didn’t seem to call for eggs. I was seriously fearful about not using eggs because typically Philadelphia style ice cream is a lot harder and not anywhere near as creamy as custard based ice cream. There’s no custard here. I felt like a traitor to my favorite custard ice creams. It felt wrong but omg it was so completely right.

The cream cheese is basically a stand-in for the custard base. You know what else? While it clearly has a cream cheese taste – you’d hope it would considering it’s cheesecake ice cream, it’s not overwhelming – which is good for people who aren’t a huge fan of it. Trust me. This is a must make ice cream. If you don’t have an ice cream maker yet. You still need to save this, pin it, share it whatever you need to do to save it for later because you’ll want to make this. And then devour it.

Roasted Strawberry Cheesecake Ice Cream

Creamy homemade cheesecake ice cream with roasted strawberries and graham cracker crumbs throughout.

Ingredients
 

  • 1 C whole milk
  • 1 C heavy cream
  • 8 oz cream cheese, softened
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 1/4 C granulated sugar, divided
  • 2 C strawberries
  • 1/3 C graham cracker crumbs, roughly 3 sheets

Instructions
 

  • Blend milk, cream, cream cheese, salt, vanilla and 3/4 cup sugar until smooth. Transfer to clean container, cover and chill overnight.
  • Meanwhile, preheat oven to 425 degrees. Hull and slice strawberries, tossing with remaining 1/2 cup sugar. Roast on a parchment lined baking sheet for 15 minutes. Transfer to a clean bowl, cover and chill.
  • Churn liquid according to manufacturer's directions. In the last 5 minutes, drop strawberries and liquid a a small spoonful at a time.
  • Alternate layers of ice cream and spoonfuls of graham cracker crumbs in a freezer safe container. Freeze until firm.

Notes

Recipe serves roughly 4-6, yields 1 quart.
