So like the masses… we didn’t win the big ticket. Bummer. But, we did win four dollars! I like to think of it as four dollars richer and not four dollars recouping what we lost on the purchased tickets but hey… whatever, right? I’m almost tempted to buy tickets for the next drawing simply because it probably has the best chance for winning, given that most people will have sworn off lottery tickets for a while after losing during this last one. But… I’m not much of an optimist when it comes to these things so I feel like I’d just be throwing the money away agin. I can completely see how addicting it can easily be for some people to keep trying though.
And now, I have Hunger Games in my head… “may the odds be ever in your favor”. If only!

I’m head over heels in love with this enchilada sauce. It’s my absolute favorite and use it at least several times a month on various recipes from pizza to pasta and more!
This is hands down the absolute best homemade enchilada sauce. And, because it’s so ridiculously easy to whip up, there is absolutely no excuse to not make it! If you have 5 minutes and can do some light whisking, you can make this. It’s also super easy to customize the level of spiciness. Kick it up a notch, tone it down… whatever works for you!

Enchilada Sauce
Ingredients
- 1 C chicken broth
- 2 Tb all purpose flour
- 1/4 tsp dried oregano
- 1/4 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground black pepper
- 3/4 tsp salt
- 1/4 tsp cayenne pepper
- 1 Tb chili powder
Instructions
- Whisk together all ingredients in a small saucepan. Cook over medium heat, whisking occasionally until thickened, roughly 5-8 minutes.
- Use immediately or cover and chill for future use. For best results, press plastic wrap to the surface to prevent a skin from forming.
I usually make my own enchilada sauce too! Its so easy to put together and tastes so much better than canned! And I could eat Mexican food most of the nights of the week. :) I’m excited to have another version to try!

My husband bought tickets. I never do, since I am less of an optimist. I love this recipe. I had no idea thats how you made enchilada sauce. I would have guessed there was either tomatoes or whole chili peppers ground up init. This is so simple and I have all the ingredients right here!
I’m sure there are a bunch of ways to make it but this is my favorite and it’s so packed full of flavor. :)

Ok so that clip is pretty hilarious, up there with the SNL one! I love this homemade enchilada sauce and how thick it looks! I have a hard time finding one at the grocery store that I like so I’ll definitely be giving this a try. Have a great weekend!

How long do you think this would keep in the fridge?
I’ve kept it in the fridge for a week or two with no issues. I’m sure it would last much longer than that since it’s such simple ingredients. Be sure to press plastic wrap to the surface during storage to prevent a skin from forming.
