I’ve fallen into the great summer hole. It was hard but I managed to climb out and share these amazing cookies, because you absolutely need them in your life. But first… a little recap, because it’s been a while.

My children are apparently fish. They’ve been in the pool everyday since starting summer break, except one… it rained and was too cold to swim. That didn’t stop them from asking though! It’s become part of our daily routine and I hope we’re able to keep up with that as much as possible.

I picked up a shark float a couple weeks ago, for the kids to use. I decided to give it a try yesterday. Lemme just say, they’re so much harder to ride or float on than they look. I’d say my balance is pretty good, but I tipped over super fast. Oh well! It was fun and definitely funny…for myself and everyone else. I’m absolutely obsessed with my donut float though. If you’ve been eying them but have been resisting or have just been on the search for the perfect float, this is totally it. It’s a perfect donut/ring float for an adult and it’s fun. Super comfy. I’ve actually been eying others but I’ll try to resist buying more…at least for this year.

Also, can we discuss deer flies? They’re horrible little beasts. One took a chunk out of my ankle and it hurt SO bad. It seriously itched and ached for days. Next to mosquitoes and spiders, I’d love for deer flies to vanish. I would happily live without them.

For a while I’d been searching for a nylon crossbody bag to use this summer that would hold a little bit more than I usually carry, but not a ton. Nylon because it’s super lightweight and easy to clean. I still like relatively small bags most of the time, so it was proving semi-difficult to find the right one… and the price. Seriously, why are bags so expensive? Don’t tell me that the more you spend, the better the quality because I know that isn’t always true. Sure, sometimes it is but definitely not always. I ended up discovering a nylon bag by Dooney & Bourke that seemed to be exactly what I’d been looking for, this one to be exact, in case you’ve been on the hunt too! Bonus, it was marked down $50 for a short time – some kind of special deal they were having. Totally couldn’t pass that up. It must’ve been meant to be.

I’m looking for fun summer reading suggestions! What have you read lately that you couldn’t put down? I have Me Before You on my list, but besides that, I don’t have a ton that are jumping out at me to read right away.

Okay, these cookies. Stop what you’re doing and make these. Right. Now.

These are by far my absolute favorite new cookie. I’ve always been a chocolate chip cookie fan, even more so when they’re nice and soft. Huge bonus when they stay soft… psst… these do!! Left out or in a container, they’ll stay nice and soft for days!

The super soft texture brought me back to my junior high and high school days. My dad was a teacher and often teacher meetings were held in his room, since it was one of the largest classrooms in the school. Fresh coffee and a tray of freshly baked cookies were always brought in prior to the meetings and I was always able to take one. Some weeks they were so much better than others. My favorites were the weeks they were slightly underdone and ridiculously soft. Seriously good.

If you’re like me and love a soft cookie, then you absolutely must try these super soft chocolate chip cookies. They’re sure to become a new family favorite. I know it’s going to be hard to beat these moving forward!

And like always, grab one while you can because these are definitely going to disappear fast!

Yield: 11-12 cookies

Prep Time: 5 minutes

Cook Time: 12 minutes

Total Time: 2 hours plus

Super Soft Chocolate Chip Cookies

Perfect super soft and chewy chocolate chip cookies that stay soft! Enjoy warm for a super ooey gooey center! A must make for all chocolate chip cookie fans!

Ingredients:

  • 1/2C unsalted butter, softened
  • 1/2C granulated sugar
  • 1/2C light brown sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 3/4C all purpose flour
  • 1C semi-sweet chocolate chips 

Directions:

  1. In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Mix in egg and vanilla, followed by salt, baking soda and baking powder. Scrape bowl as needed. Mix in flour until fully incorporated and no streaks remain. Stir in chocolate chips by hand. Chill cookie dough for at least 2 hours or until it is thoroughly chilled. 
  2. Preheat oven to 350°F. Line a rimmed baking sheet with a silicone baking mat. Scoop dough using a large cookie scoop (roughly 3 tablespoons worth of dough), spacing 2-3 inches apart on prepared baking sheet. If desired, top off dough balls with additional chocolate chips.
  3. Bake for 12-13 minutes. Cool on pan for 3-5 minutes, then transfer to a wire rack to cool completely. 
  4. Store in an airtight container for up to several days or freeze for later.

    While I will gladly pass on the “privilege” of having a deer fly take a chunck out of me, I surely would rather NOT pass on taking a chunk out of these cookies! I adore super soft cookies and Rachel, these sure would hit the spot – cookies for breakfast cos it’s Monday? :)

    When you say chill for two hours, do you mean to put them in the fridge or just leave it out?

      In a recipe, to chill something always means to place in the refrigerator, never to let hang out. :)

    So happy we don’t really have flies or mosquitos here in Phoenix (unless you happen to have horses). Growing up in Ohio, I used to get eaten to pieces by the mosquitos – ugh!

    These cookies, though! Ahhh! They are beautiful and look so soft! I could eat an entire batch!

    I am the most ungraceful person to walk the earth. I know that I would end up in the water within a second getting onto any floaty thing in the pool. I need to work on my mount lol I’d rather sit by the side of the pool munching on these cookies anyway!

      I tried so hard to stay on that darn thing, but there was just no way. Regular floats aren’t a problem though. And I swear by the giant donut ones. There’s no way you can tip in those!

    I am always saying bugs should go away. They attack me the second I go outside. My husband annoyingly reminds me of all the good things they do for the ecosystem. I still haven’t had him come up with a good reason for mosquitoes though.

      I’m sometimes reminded that if we kill off mosquitoes, dragonflies won’t have them to eat, but surely there are other bugs dragonflies can eat… right? Definitely not a fan of most bugs ;)

    These cookies look so yummy.. I have a pool and live in the Northeast. I have the deer flies and the horse flies that are around the water. I swear they must have teeth! I would look it up on the internet but fear nightmares! Stay safe!

    Question! I made these and the dough was delicious, I could not stop eating it! But they did not bake well! I followed the recipe exactly, it did seem like a lot of flour, the dough was getting pretty tough. After chilling for a few hours I baked them and they didn’t seem to spread? They started turning brown though, did I miss something?!?! Thanks!

      This is based off of one of my other favorite cookie recipes. The ingredient amounts and baking instructions are correct as written and should give you ideal results when followed. If you were mixing by hand, it will always take a bit more effort than using a stand mixer. Without being there to see your process in person, I can’t be 100% sure what went wrong for you. But, it sounds as though your oven may be running hot, since it cooked the cookies too quickly without allowing them to spread. They should spread to a certain degree, but not go flat and thin.

    This recipe was wonderful! Most chocolate chip cookie recipes I tried got too chewy and almost hard after they cooled; the cookies didn’t stay soft at all! In this recipe, however, the cookies stayed wonderfully soft even a few days after baking! I love it, and will definitely be making it again soon!

    These are amazing! They really do stay soft! They are almost better the next day. Almost. I made mini cookies so the batch went much farther for me, I think I made nearly 4 dozen. We baked up a few for ourselves every other night and I gave a 1/2 dozen to a friend! They are addicting! I already want to make more!
