Apple Butter Oatmeal Crisp Ice Cream

A few random thoughts for today…
I’m completely obsessed with this new soap dispenser. It’s seriously life changing in the kitchen having an automatic soap dispenser. And it’s amazing for the kids to use too. For once, the bathroom isn’t getting totally soaked from them pumping out their own soap and vigorously washing their hands (or playing in the water… who knows what goes on in there).
If you like funny and totally awkward and sometimes inappropriate movies, then you need to watch this. I was honestly waiting for it to be awful but it had us laughing so hard at times. Totally unexpected.
We’re currently obsessing over Covert Affairs and had been in full blown binge mode until the Fall shows started back up. Now I’m finding fewer and fewer shows I want to watch so we have time to catch up before the next season starts in a few short weeks. Are you a fan? I have strong opinions about what happened in a few seasons.
And of course… this ice cream!

By far one of our favorites so far. It’s like pie blended up and frozen. Sort of.
Creamy homemade cinnamon apple butter ice cream with oatmeal crisp crumbles throughout and a homemade salted caramel sauce topping.
For apple lovers, this is an essential Fall ice cream. You may not even want to share it. It’s that kind of good. Or at least make a double batch, because it’s going to disappear before your eyes!

Apple Butter Oatmeal Crisp Ice Cream
Ingredients
Ice cream:
- 1 1/2 C whole milk
- 1 1/2 C heavy cream
- 1/2 C granulated sugar
- Pinch salt
- 1/2 tsp vanilla extract
- 5 large egg yolks
- 1 C apple butter
Oatmeal crumble:
- 6 Tbsp all purpose flour
- 1/2 C old fashioned oats
- 1/4 C light brown sugar
- 1/4 tsp cinnamon
- 3 Tbsp unsalted butter melted
- Salted caramel sauce
Instructions
- In a large bowl, with a mesh strainer set on top, add 1 cup heavy cream. Set aside.
- In a medium saucepan over medium heat, combine remaining heavy cream, whole milk, sugar, salt and vanilla. Stir to combine and dissolve sugar. When mixture begins to steam, slowly drizzle 1 cup hot liquid into egg yolks while whisking continuously. Transfer egg mixture to saucepan. Continue cooking until mixture coats the back of a wooden spoon or rubber spatula. Pour through mesh strainer into reserved heavy cream, discard any solids. Cool over an ice bath to room temperature.
- In a blender, combine custard mixture with apple butter. Process until smooth and combined. Transfer to a large bowl. Cover and place in refrigerator until thoroughly chilled or overnight.
- Preheat oven to 375°F. In a medium bowl combine crumble ingredients by hand. Break up into no larger than 1/2-inch pieces. Transfer to a 9x13 baking pan. Bake for 10 minutes. Cool completely before adding to ice cream.
- Churn ice cream according to manufacturer's directions. Alternate layers of ice cream and crumble in a freezer safe container. Transfer to freezer until firm.
- Serve with salted caramel sauce or whipped cream.

How I love this in ice cream form!! Now that you mention the automatic soap dispenser, I kind of want one. There have been so many times my hands are gunky from messing with dough/food/etc that I don’t want to press the soap dispenser. You might have talked me into it!!
I can’t stop thinking about how germy our old soap dispensers must have been… especially in the kitchen! Gross. You need one of these!

Ice cream makers are not easily available where I come from, so is there a way I can almost recreate the same but using another equipment? Let’s say a blender? If so, how can I do this? By the way, I love ALL your recipes that I’ve come across.
You could certainly give it a try using a blender. The ice cream maker both adds body to the ice cream while also freezing it a bit before it’s final freeze. Without this, you may have a firmer ice cream but it should still taste fine. Good luck!! :)
