It’s hard to believe today is the first day of September! Keeping with tradition, I’m sharing an apple recipe to kick off the month! I eagerly wait for September to roll around ALL year long. I love this month…for the apples! Plus, the weather is pretty spectacular this time of year. Right now, we’re in the midst of a warm spell, but the humidity has been low and there have been frequent breezes to keep the temperature feeling comfortable. Basically, it’s been pretty perfect. I would happily enjoy this weather year round.

I finally took a trip to our favorite apple farm last week. I’d been holding out for quite a while, because I wanted to make sure I didn’t jump the gun and get the first ones… which quite frankly aren’t always the best, or at least no where near my favorites (those come later in the month). We made the mistake of visiting another local apple farm first, simply because we were in the area. I figured, one stop shopping kind of thing. Bad decision. The apples were puny and depressing. Everything else they had was beautiful, but I didn’t want tomatoes or pasta or bread… I wanted apples!

Back to our favorite apple farm. Forever and always! They never disappoint. Big bold beautiful softball sized apples. A must.

I combined two of my favorite things into one amazing breakfast/dessert. Because let’s be real, you can totally eat this for either or both. It’s that tasty.

Growing up we regularly ate waffles with family friends. Slathered with jelly or coated with syrup. Essential sweeteners for a kid. But this version is worlds better. A treat for Fall!

Apple Pie Waffles

Spiced homemade waffles, topped off with tender cinnamon and brown sugar coated apples. Serve with sweet maple syrup for the ultimate Fall breakfast!

Ingredients
 

Apples:

  • 3-4 apples
  • 3 Tb light brown sugar
  • 1/2 tsp cinnamon

Batter:

  • 1 1/2 C all purpose flour
  • 1/4 C cornstarch
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp all spice
  • 1/4 tsp nutmeg
  • pinch cloves
  • 2 Tb light brown sugar
  • 2 large eggs, separated
  • 1 C milk
  • 3 Tb vegetable oil
  • 1 tsp vanilla extract
  • 1/4 C granulated sugar

Instructions
 

  • Preheat oven to 350°F. 
  • Peel and core apples. Slice into 1/4-inch thick pieces. Toss with brown sugar and cinnamon. Transfer to a small baking dish. Bake for 30 minutes or until tender. 
  • Preheat waffle iron. 
  • In a large bowl, combine dry ingredients, reserving granlated sugar for later. 
  • In a large bowl or glass measuring cup, combine liquid ingredients. 
  • Separate eggs, adding the yolks to the milk mixture and the whites to a clean medium bowl. 
  • Whisk milk mixture to combine. Pour into dry mixture, whisk or stir to combine until nearly smooth. Set aside. 
  • Beat egg whites until soft peaks form. Add in granlated sugar. Continue beating until stiff peaks form. 
  • Fold egg whites into batter until no streaks remain. 
  • Add batter to coat waffle iron, cook until dark and crisp. *Do not overfill. Transfer to a wire rack to stay crisp or to an oven set at 250°F to keep warm until ready to serve. Repeat with remaining batter. 
  • Serve waffles with cooked cinnamon apples, maple syrup and whipped cream, if desired. 

Notes

Recipe serves roughly 4-8.
*Batter amount and cook time will vary per waffle iron size. Refer to your manufacturer's instructions for proper amount and time.
