I never thought a day off from school could be so much fun. Don’t get me wrong, we have fun on regular days – hanging out, going places, even just trips to Target can be exciting (hey… there’s plenty of stuff we totally don’t need there). ;) But this time we opted for something different. It was totally planned and then we changed our plans last minute.

Originally I thought we should take advantage of a professional development day and go to the aquarium, figuring that due to both the pending snow and the fact that most other schools would still be in session that it wouldn’t be nearly as busy. We decided basically last minute to ditch that idea and went to Chuck E Cheese’s instead (or “Chuck E Cheese-itz” as my 4 year old calls it).

Let me tell you… it was probably the best $25 I’ve spent in a while. We had SO much fun. Not a single whine or cry was had. Even the Mr and I had a blast, not only watching the kids, but having our own fun with games there. My personal favorite… skeeball. It was kind of addicting. I don’t know why it took us so long to take the kids there but now it’ll definitely be on my list of rainy day activities.

As for other activities… a certain really big football game is coming up. Eh hem… you know the one I’m talking about. It starts with Super and ends with Bowl. I don’t really get the names of these games. Super bowl… world series… Stanley cup… Just weird but hey, I’m in it for the food and the commercials and maybe a little bit of the half-time show. The game, meh… take it or leave it.

But we DO need food. Food is essential to a good party. Bad food can drastically impact the mood of a party. Right? So, you definitely want these homemade crispy buffalo wings on the menu. Real wings, not legs masquerading as wings. And these wings are baked, not fried… making them just a tad healthier but still full of amazing flavor that you’d hope for.

Buffalo Chicken Wings

Jumbo baked chicken wings, tossed in a spicy buffalo sauce. A perfect game day food!

Servings: 4 plus

Ingredients

  • 3-4 lb chicken wings
  • 2 Tbsp olive oil
  • 2 tsp salt
  • 1 tsp ground black pepper

Buffalo sauce:

  • 2 Tbsp unsalted butter melted
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 1/2 C buffalo wing sauce

Instructions

  • Preheat oven to 400°F. Prepare a rimmed baking sheet with foil, for easy cleanup, and a wire rack.
  • In a large bowl, toss chicken wings with olive oil, salt and pepper. Arrange in a single layer on prepared pan with rack. Bake for 40-50 minutes or until cooked through and skin is crispy and golden.
  • In a medium bowl, combine buffalo sauce ingredients. Working with one or two wings at a time, toss to coat in prepared sauce. Transfer to desired serving dish and enjoy immediately with optional dipping sauces.

    Man, I don’t have kids, but now I totally want to go to Chuck E Cheese!
    I know I would totally look like the creepy old lady there all alone, but you made it sound so fun!
    I am with you on taking or leaving the game, but these wings? Yes please! Buffalo chicken anything is the language of love.

    This look amazing! Is there a difference between Hot Sauce and Buffalo Wing Sauce?

      The overall flavor is different from one to the next. If you have a preferred brand or style, I’d use that so it’s flavor you know you’ll enjoy. I used Frank’s Red Hot buffalo wing sauce for this recipe.
