Can we please discuss how scary it is that it’s already March. How did that happen?! I mean, I know how, but it just doesn’t seem possible. I swear it was only September yesterday. On the bright side, the days are getting longer, the weather is hopefully getting nicer and less snowy and my birthday is less than two weeks away… which could be both good and bad. Anyway…

So I had ice cream for lunch and it was fabulous. I’m thinking I should eat dessert first more often. And you’re probably wondering why I’m bringing that up when here I am throwing chicken tacos in your face. It was my plan all along… I guess both shoving tacos in your face and eating dessert for lunch, because in the end these tacos were my snack. Backwards I know, but it needed to be done during nap time. That seems to be the way of things most days.

I’ve kind of been dreaming about making barbecue chicken tacos for a while and just never got around to making them happen until now. They’re a nice chance of pace from our usual taco night. Nothing against our usual spicy tacos, but something different is always nice. Of course the Mr would never eat these. He hates barbecue like I hate tomatoes, which is okay because it means more barbecue yumminess for me!

You can dress these up even more than I did. I used what I had on hand. So if you happen to love avocados or red onions, by all means add them! You could even add in jalapeños for a bigger kick. My favorite part about these… the bacon. I know! Bacon in a taco?! What is wrong with me. I couldn’t resist it. Honestly, it was a totally last minute decision. I started thinking about the bacon and barbecue chicken pizza and how perfect the flavors work together. Bacon and barbecue chicken are a magical pair. Trust me. And this is coming from someone who claims to not be a sweet and salty fan.

These tacos have everything going on… sweet, salty and a little spicy!

This is an absolute make your own recipe. There aren’t any real quantities, just guidelines for making this. And make this you should!

The weird thing about this recipe… or me… or both is that the chicken is still delicious cold. I was nibbling on leftovers hours later. I love those kinds of recipes. Amazing hot, still great room temp or cold. That way you can have a bite and walk away and keep snacking later. I suppose that’s both bad and good. ;)

Barbecue Chicken Tacos

An easy, make it your own, barbecue chicken taco recipe that is sweet, salty and a little bit spicy.

Ingredients

  • 1 chicken breast
  • 1/3 C barbecue sauce
  • salt
  • ground black pepper
  • cayenne pepper
  • 3 strips thick cut bacon
  • soft wraps or hard taco shells corn or flour

Toppings:

  • Monterey Jack cheese shredded
  • lettuce chopped
  • sour cream
  • avocado
  • jalapeños
  • corn
  • red onion

Instructions

  • Trim chicken and pound down to 1/2-inch thickness. Heat a large skillet or grill pan over medium heat. Sprinkle one side of chicken with salt, pepper and cayenne pepper. Brush with half of the barbecue sauce. Place seasoned side down in heated pan. Season remaining side of chicken as done previously. Cook for 4-5 minutes per side or until chicken is cooked through. Transfer to a cutting board and slice into thin strips.
  • Cook bacon, drain on a paper towel and chop into small pieces.
  • Layer wraps or fill taco shells with desired fillings. Enjoy!
