I am so excited for all of the new movies coming out soon. There are so many that it’ll be hard to decide which to go see. I feel like Mary Poppins is one of those that definitely requires a trip to the theaters. Right? I mean… I grew up with the original and now my own kids will get this fun new version. Bonus, I love all of the actors in this version and I can only begin to imagine how fun and magical it’ll be. Will it rival the original? I suppose only time will tell.

Between baking batches of Christmas cookies and other goodies this week, I’ll be in full blown binge mode on season two of The Handmaid’s Tale! I’m so excited! I was super close to signing up for Hulu for the sole purpose of watching it as it became available but everything comes out on DVD so fast these days, so it wasn’t too hard to wait. I haven’t heard any spoilers about the second season. Fingers crossed it was as good or better than the first! Maybe I’ll even manage to start wrapping presents while I watch. That’d be amazing to get out of the way so it’s not all left till the last second!

I can’t promise these will be the last slice and bake cookies you’ll see from me this year. They’re just so easy! I love the ease of shaping the dough, chilling and slicing whenever the mood strikes. As you wrap presents or finish a roll of paper towels, be sure to save the inner cardboard piece! Slice it length-wise and save to store your logs of dough! A super handy, reusable shaping tool! If you don’t have either of those handy, you can always use two large glasses laying end to end with the dough in the middle. Any of these options will help keep your dough nice and round.

I will give you a bit of warning. These cookies are dangerously delicious. It’ll be nearly impossible to stop at one but definitely be sure to grab a few before they’re gone because they absolutely will disappear ridiculously fast! Everyone will be wanting seconds of these!

Cinnamon Sugar Slice and Bake Cookies

Soft and chewy cinnamon sugar slice and bake cookies with a crunchy sugared edge. A perfect treat to share with friends and family during the holidays or any time of the year!

Ingredients
 

  • 1/2 C unsalted butter, softened
  • 1/2 C granulated sugar
  • 3/4 C light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 3/4 C all purpose flour
  • Turbinado sugar for rolling

Instructions
 

  • In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Mix in one egg at a time, followed by the vanilla. Scrape the bowl as needed. Mix in cinnamon, salt and baking powder, followed by one cup of flour at a time until fully combined. Chill dough for 15-30 minutes.
  • Divide dough into two equal portions. Shape one piece of dough into a 10-12 inch log, roughly 2 inches in diameter. Wrap in wax paper and store inside of a cardboard tube (such as a paper towel tube cut length wise or a wrapping paper roll). Repeat with remaining dough. Refrigerate dough logs for at least 3 hours or overnight. Dough may be made ahead and stored in the refrigerator for 1-2 weeks or frozen for up to a year. 
  • Preheat oven to 350°F. 
  • Line a baking sheet with a silicone baking mat or parchment paper. 
  • Add up to 1/2 cup of turbinado sugar to a small rimmed baking sheet or pan. Roll one log of dough in the sugar to coat. Continue rolling and pressing down gentle until sugar has coated the dough well. 
  • Carefully slice 1/4-inch slices, spacing 1-2 inches apart on prepared baking sheet. Returning remaining dough to the refrigerator. Bake cookies for 10-12 minutes. Allow cookies to rest for 4-5 minutes before transferring to a wire rack to cool completely. 
  • Store cookies in an airtight container.
