Book update! I’m nearly done with After You. I’ve enjoyed it way more than I expected to. My issue with it initially was that I loved Me Before You so much that I didn’t want there to be an after. I was worried about how it would deal with the characters and relationships I’d already grown to love. I’m glad I waited until I could read it for free from my library downloads. BUT I’m also really glad I did finally have the chance to read it. I’m reserving the right to change my mind completely depending on how the ending is. The ending can absolutely make or break a book!
Annnd along the same lines… I just watched the movie Me Before You. I’d heard some unhappy reviews of it after it came out in theaters. I knew once it was available on DVD I’d see it. I enjoyed it but like any book turned into a movie… the book was SO much better. There was so much more to love about what you’re reading than watching. Not to mention that so much gets left out or maybe the characters you pictured in your head, turned out to be different on screen. Still a good watch, but I went into it with fairly low expectations.
Also, something weird happened this week. It’s as if retailers everywhere had a date marked on their calendars ready to press a button and spam everyone with very premature Christmas ads. It’s still September! We all know it’s coming. We don’t need three months to plan for it. One month is more than enough. Seriously. I know some people start planning and counting down for next Christmas once the current one passes. That’s not me. I want to enjoy every holiday. Let’s get through Halloween, election day and Thanksgiving first please.
I’m not sure how it’s possible, but dates don’t lie. It’s been nine months since my last pizza post. We were clearly way overdue for a new pizza recipe. It honestly didn’t feel that long, but that’s probably because we have pizza night every week in my house. It’s our thing. The kids… okay and the adults, totally look forward to it. There is never a question of what we’re having for dinner on Friday nights. It’s pizza night. Pizza and a family friendly movie.
Out of all of the pizza recipes I’ve shared, I’ve never shared a basic cheese pizza recipe. I have a pan pizza with option to be cheese only and a white pizza with a garlic and olive oil base… but no classic cheese pizza. We needed to change that, because a classic is always a winner. And this cheese pizza is a total winner.
Easy homemade dough, stretched into a perfect thin crust and topped off with not one or even two but three varieties of cheese. More cheese is always a good thing.
This classic thin crust three cheese pizza is guaranteed to be a new family favorite. Ditch the take-out and whip this up instead for your next pizza night!
Classic Thin Crust Three Cheese Pizza
Ingredients
Dough:
- 1/2 C water heated to 115°F
- 1/2 tsp active dry yeast
- 1/4 tsp granulated sugar
- 1 1/4 C all purpose flour
- 3/4 tsp salt
- 1 Tb olive oil
Toppings:
- 1/2 C pizza sauce
- 3-4 Tb grated Parmesan cheese
- 1/2 C sharp cheddar cheese shredded
- 1 C whole milk mozzarella cheese shredded
Instructions
- Heat water to 115°F. Combine warm water with yeast and sugar. Allow to proof for 5-10 minutes.
- In a large bowl or stand mixer, combine flour and salt. With mixer running, add yeast mixture, followed by olive oil. Mix until a smooth ball forms. Knead by hand if necessary. Transfer dough to a lightly greased bowl, cover and allow to rise in a warm location for 1 hour or until doubled in size.
- Preheat oven to 425°F.
- Lightly grease a baking sheet with olive oil. Shape dough to desired size. Spread pizza sauce evenly over the dough. Sprinkle with Parmesan, followed by mozzarella and cheddar cheese.
- Bake for 20-25 minutes or until desired crispness is reached.
- Slice and serve warm.

Yay! I’m glad you’re liking the book. I had the same worries when I was reading it, but wasn’t disappointed. Thanks for the movie review too, I’ve been thinking about watching it, but am assuming the book is way better…they usually are. Stupid Christmas ads, I can’t stand that they start in with it this early. And finally this pizza…Love! I need to try your thin crust recipe, mine are always too thick.
