I’m kind of glad the holidays are almost here and will soon be over but not for the reasons you might think. Nope. I’m running out of even half decent holiday movies and will soon be on repeats. I don’t even watch things daily. I do love a cheesy good holiday movie though. And I don’t have access to Hallmark, but at this point, maybe that’s a good thing. From my understanding, their holiday movies are 100x more cheesy than the Netflix movies. Correct me if I’m wrong. I mean… they’re all very predictable but still fun to watch. I think cheesiness is more tolerable when it comes to holiday movies for some reason. I can’t pinpoint exactly why, but it’s true.

Speaking of cheesiness… has anyone else been watching The Masked Singer? I was hooked since the show started last year. Such a fun premise. Mystery celebs, singing and occasionally dancing, all while hidden under a costume. Some have been easy to predict, while others I either couldn’t figure it out or had no clue who they were even when they were un-masked. It happens. This seasons singers were so much better than the first. Seriously amazing. I look forward to it weekly. If you haven’t had a chance to watch it yet, you should definitely start from the first episode and work your way through. Try to guess and have fun with it. There is some truly hidden talent!

I am a huge snickerdoodle fan. But I always lean towards the thick and fluffy varieties. Thin and chewy is okay too but a good thick and fluffy, super soft cookie is worlds better. And these cookies are no exception to that.

Irresistible. Addictive. Amazing. 100% yes to all of that.

I’m definitely biased but I feel like these get better with age. Immediately out of the oven, they’re amazing with a crisp coating. Overtime they soften into happy little pillows of cookie goodness. Super hard to resist. I promise you’ll feel the same way!

Tips tricks and questions answered…

How many will this recipe make?
As written, this will make slightly more than 2 dozen. Too many? Freeze extra or cut the recipe in half. Not enough? Double or increase the recipe as needed.

What size should my dough balls be when shaped?
If possible, use a medium cookie scoop for consistent sizing. If one is not available, you’ll want roughly 1.5-2 tablespoons of dough for each cookie. Slightly larger is okay too, as long as you are consistent with your own scooping and shaping.

Does this recipe need to be chilled?
Chilling this dough is not necessary but it absolutely can be chilled if you need to make the dough ahead or to make it easier to work with. Keep in mind, this dough is on the softer side and slightly sticky. Dough balls will be soft without chilling. If the dough is sticking to your hands, lightly grease your hands with a baking spray that includes flour.

How long will these last?
These can easily be stored for a week or longer in an airtight container. Baked cookies may also be frozen.

Can I freeze the dough?
Yes! For easier storing, do a short 30-60 minute chill, wrap the dough, label with essential info and freeze. Frozen dough will keep for up to a year.

Can I make substitutions to the ingredients?
Yes and no. Baking is a science. This recipe works with the exact measurements listed. Altering one or several of those can cause the recipe to fail. Ingredients

Cookie dough

  • 4 oz cream cheese softened
  • 1/2 C unsalted butter softened
  • 1 C granulated sugar
  • 1/2 C light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tsp cream of tartar
  • 1 tsp baking soda
  • 1 1/4 tsp cinnamon
  • 2 3/4 C all purpose flour

Coating

  • 1/3 C granulated sugar
  • 2 tsp cinnamon

Instructions

  • Preheat oven 400°F. Line a baking sheet with a silicone baking mat or parchment paper. Set aside.
  • In a small bowl, combine remaining 1/3 cup granulated sugar with 2 tsp cinnamon. Set aside.
  • In a large bowl or stand mixer, beat cream cheese until smooth and fluffy. Beat in butter. Cream together with both sugars, followed by one egg at a time and vanilla. Scrape bowl as needed. Mix in salt, baking soda, cream of tartar and cinnamon. Add one cup of flour at a time, increasing speed between additions.
  • Scoop dough using a medium cookie scoop, leveling off each scoop. Carefully roll into a ball. Roll dough ball in prepared cinnamon-sugar mixture. Space 2-inches apart on prepared baking sheet. Repeat with remaining dough. *See notes
  • Bake cookies for 8-10 minutes. Transfer cookies to a wire rack to cool completely.
  • Store cookies in an airtight container for up to a week.

Notes

Dough will be soft and may be sticky. Lightly greased hands can help with this.
Dough may be chilled prior to working with or between batches but is not necessary.

    I made your cream cheese snickerdoodle recipe but even this sugar and brown sugar are listed as ingredients, I didn’t see in the instructions when they should be incorporated into the recipe. Possibly an oversight?

      Thank you for catching that. They should be added after the butter is mixed in.

    These cookies are amazing!! They are puffy and soft and delicious. I’m not the biggest snickerdoodle fan- I make these for my son- but I have become a fan with these!!
