Funfetti Chocolate Chip Birthday Cookies

Four years ago, give or take a day, I embarked on this blogging journey with no idea where it would lead me. No real plan or intentions beyond sharing recipes my family enjoys. The basic plan has stayed the same… always sharing recipes my family loves.
If you asked me four yeas ago, I never would have guessed I’d have so many amazing blogging friends or devoted readers…not to mention that I’d even still be doing this because let’s be real, beyond my kids or marriage, this is the longest thing I’ve ever kept up with. I’m where I am today because of you and I appreciate that more than you can possibly understand.

I thought given the that this is sort of a celebration… birthday or even anniversary for the blog, sprinkles were necessary. And so was a truly delicious treat perfect for the occasion, or any occasion. They’re perfect for a party of really any day of the week, because any day ending with Y deserves celebrating.
I revamped one of my favorite cookie recipes into something festive! These funfetti chocolate chip cookies are loaded with sprinkles and chocolate, but even more important, they’re the perfect amount of crisp and chewy that stays that way. If you’re looking for a fun cookie that tastes great and will brighten someones day, give these a try! You won’t regret it.

Funfetti Chocolate Chip Birthday Cookies
Ingredients
- 10 Tbsp unsalted butter softened
- 2/3 C granulated sugar
- 1/2 C light brown sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 3/4 tsp coarse sea salt
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1 C cake flour
- 3/4 C bread flour
- 1 1/2 C semi-sweet chocolate chips
- 1/4 C rainbow sprinkles
Instructions
- In the bowl of a stand mixer, cream together softened butter and sugar. Mix in egg and vanilla, followed by sea salt, baking powder, baking soda and flour. Continue mixing, increasing speed as needed, until no streaks remain and all ingredients are incorporated well. Mix in sprinkles and chocolate chips by hand. Cover and chill at least 1-2 hours.
- Preheat oven to 350°F.
- Using a medium cookie scoop, place cookie dough balls 2-inches apart on a silicone lined baking sheet. Bake cookies for 13-15 minutes or until lightly golden around the edge. Allow cookies to rest on pan for 1 minute prior to transferring to a wire rack to cool completely. Store cookies in an airtight container.

Hi there, just had a quick question. I don’t have bread flour in my cabinet, I was wondering if it were possible to substitute it with whole wheat flour, I’m sure this will probably affect the texture of the cookies… Please let me know!
It will definitely change the texture to some degree, but you’re more than welcome to give it a try! Be aware that since you want to substitute with whole wheat flour, you may need more liquid. If that is the case, it’s possible an extra egg would do the trick or you could use less whole wheat flour. Perhaps add 1/4 cup at a time until the desired (thick but workable) consistency is reached.
Can I substitute regular white flour ? May try these today!
You can, but keep in mind that doing so will result in a different texture.
