Funfetti Cupcakes with Vanilla Buttercream Frosting

Spring is upon us. I know not just because of the weather or people talking about their plants starting to blooms. Nope… I know because the neighborhood cats are all stopping by to visit! Yesterday we had two different visits within an hour! One of them is a favorite of ours. It looks like a mini version of our oldest, Reese. A short haired tortie. Super adorable.
I’m still slightly in disbelief over the weather we’re getting today. Almost 70 degrees… in early March! Eek! Bummer that it won’t be quite this nice on my birthday next week. There will be pie though. And thankfully no blizzards. Having a March birthday in New England means you can either expect mild Winter weather, Spring-like weather or an extreme…blizzards even. Yup, one year I was (un)lucky enough to be treated to a blizzard on my birthday. The worst part…it happened on a weekend, so I didn’t even get to miss school.
Over the weekend, we celebrated my Dad’s birthday. Sprinkles should be a requirement for birthdays… So, I made a batch of these fun cupcakes to celebrate with! They were SO good. Perfectly moist and full of flavor. I had to whip up another batch to share here with you!
They’re truly the best funfetti cupcakes I’ve ever had.
Moist homemade vanilla funfetti cupcakes, topped off with creamy vanilla buttercream frosting and extra sprinkles! More sprinkles are always a good thing!

Funfetti Cupcakes with Vanilla Buttercream Frosting
Ingredients
Cupcakes:
- 1/4 C unsalted butter softened
- 1/2 C granulated sugar
- 1 egg white room temperature
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1 C all purpose flour
- 1/2 C vanilla or plain yogurt
- 1/4 C rainbow sprinkles
Frosting:
- 1/2 C unsalted butter softened
- 1/2 C shortening
- 1 tsp vanilla extract
- 2 C powdered sugar
- 1 Tb heavy cream
- sprinkles
Instructions
- Preheat oven to 350°F. Line a cupcake pan with 8 paper liners.
- In a large bowl or stand mixer, cream together butter and sugar. With mixer running on low, add egg whites, vanilla, salt and baking powder. Scrape bowl as needed. Alternate additions of flour and yogurt until fully combined and no streaks remain. Stir in sprinkles by hand.
- Divide batter between prepared liners using a large cookie scoop.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in pan until easy to handle, then transfer to a wire rack to cool completely.
- In a large bowl or stand mixer, beat together butter and shortening. Add vanilla and powdered sugar, followed by heavy cream. Mix until light and fluffy and fully combined. Transfer frosting to a large piping bag fit with a desired piping tip. Pipe frosting onto cooled cupcakes. Immediately decorate with sprinkles.
- Serve immediately or store in an airtight container for up to several days. Cupcakes may also be stored in the refrigerator.

I feel ya on the crappy birthday weather. We get freak snow storms in May and two years in a row they happened to line up with my birthday. I’m glad you’ll be having pie for your birthday, but you should probably make a batch of these funfetti cupcakes too, they’re so bright and cheery!

Hope this birthday is a good one for you! Our weather can get pretty crazy here too. The last two years there has been a snow storm on Mother’s Day!!! Love, love, love these cupcakes! They just look so cheerful and fun!

The best substitution for yogurt is sour cream. However, plain or vanilla yogurt would be best for this particular recipe.
For the yogurt, is it 1/2 cup or 1/2 the container??
