It’s time… nearly! Thanksgiving is one of my favorite holidays of the year and somehow it totally crept up on my this year. As a kid it used to be about waking up early and watching the Macy’s parade. It doesn’t have quite the same appeal to me anymore. But I do plan to watch A Charlie Brown Thanksgiving though!

Now, it’s all about the food. Family favorites. I could honestly skip the turkey entirely, and almost did this year, but then I wouldn’t have it around to make delicious leftovers like this! The sides and dessert are where it’s at, the day of anyway! Then it’s all about the tasty leftovers. I’ve long ditched the classic sandwiches or stealing a random piece of turkey from the fridge.

It’s funny how one meal has so much expectation wrapped around it. The requirement of specific dishes – because it’s a classic, well loved recipe, made year after year. Or maybe it was a newer dish that the entire family loved and wanted again. If something is missing, it’s noticed. Then there are the lesser dishes we continue to serve because it’s just tradition. I’m sure every family has one or two of those. Tradition is a hard thing to break.

I don’t have leftovers, can I make this from scratch?
Absolutely! Use the same quantities as listed below. Prep and season your stuffing and turkey as you normally would.

How small should I chop my veggies?
Lean towards the smaller size. This will give you more variety and flavor in every bite. Dice both the onion and celery. This is basically between chopping and mincing. Chop your potatoes into small pieces so they cook well and will easily fit on a fork or spoon with other ingredients.

Would this work well with different meat?
Yes! If you don’t have turkey or don’t like it, you can substitute with chicken. One chicken breast, cooked and chopped should do the trick.

How many will this serve?
This dish will easily serve at least 4.

Leftover Thanksgiving Turkey Pot Pie with Stuffing Crust

Classic cold weather comfort food with a twist! Easy homemade leftover Thanksgiving turkey pot pie with a stuffing crust! A flavor packed must make meal!

Ingredients
 

  • 2 Tbsp unsalted butter
  • 3/4 C onion, diced
  • 1/3 C celery, diced
  • 1/3 C carrots, chopped
  • 2 cloves garlic, minced
  • 1 1/2 C potatoes, chopped
  • 2 Tbsp flour
  • 2 C chicken broth
  • 3/4 C heavy cream
  • 2 1/2 C leftover turkey meat, chopped or shredded
  • 1/4 C peas , or green beans
  • 1/4 C corn
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp dried thyme
  • 2 1/2 C stuffing, leftover or made fresh

Instructions
 

  • Preheat oven to 350°F. Lightly spray a 2 quart baking dish with olive oil. Set aside.
  • In a large stock pot or Dutch oven, set over medium-low heat, melt butter. Add carrots, celery and onions. Sauté until onions are translucent. Add minced garlic, cooking for roughly one minute before adding the potatoes. Stir in flour, tossing vegetables until coated. Add chicken broth and heavy cream. Bring to a boil, stirring until thickened. Reduce heat to a simmer. Add turkey, peas, and corn. Sprinkle with salt, pepper and thyme. Stir to combine.
  • Carefully transfer to prepared baking dish. Top off with stuffing.
  • Bake at 350°F for 40-45 minutes or until potatoes are tender and stuffing is golden brown. If stuffing begins to brown too early, lightly cover with foil and continue baking.
  • Serve warm.

Notes

Recipe can be made gluten free by substituting 1 tablespoon of cornstarch and gluten free stuffing.
